Cauliflower cheese

DD (aged 7) wanted just a bowl of cauliflower cheese for tea tonight. She’s had sausage, mash and peas at school for lunch so has a lighter evening meal. I offered sandwiches, crumpets, crackers and beans with toast/bread she insisted she wanted the left over cauliflower cheese from yesterdays roast dinner.

It feels weird to me to have that for tea, but I think I might be UR? She had it warm (microwave). It was basically cauliflower in a cheddar cheese sauce topped with mozzarella and breadcrumbs – I made the sauce myself so know there’s nothing bad in it.

She’s eaten the lot. But I still feel weird about it. Tell me I’m UR and overthinking it Grin

Had to click on this thread because I’m eating cauliflower cheese for dinner right now. Mushrooms in the cheese sauce, some crispy bacon sprinkled on top and a couple of cumberland sausages. Heaven on a plate.

@Gumboots29 we have 2 hot meals too! Is this not normal? What do other people eat for lunch/dinner.

Cauliflower cheeses is a perfect balanced meal, especially if it has a nice crunchy layer of breadcrumbs and grated cheese on top.

I got a massive cauliflower in my veg box this week, so we will probably have cauliflower cheese at least twice.

Oh I would love to have cauliflower cheese for dinner. Would probably add some more veg though, or crusty bread. But no-one else in our house likes it.

I'm also jealous of households of children with naturally small appetites. I've got 2 boys (now mid-late teens). I'm sure they have hollow legs. There is no way on earth they'd have been satisfied with sandwiches or crumpets for dinner at home if they'd had a school dinner at lunchtime. They've cost us an absolute fortune in food. Both of them are a healthy weight, in fact, looking at them you'd think that DS1 needs to put some on. But he's about 6 ft 2 with huge feet so I guess all those calories must have gone on growing upwards.

I am laughing at the the thought of their faces if I presented my two with cauliflower cheese as a main meal. There is absolutely nothing wrong with that for most people, but I don't think it would satisfy growing teenagers at all, so make the most of it now, OP!

I once made cauliflower cheese with a very tiny cauliflower, so decided to add some cooked macaroni to the cheese sauce before adding the breadcrumbs, butter and grated cheese and putting it into the oven to crisp up. Since then hybrid cauliflower/macaroni cheese has become a favourite in this house.

Love this and definitely a meal. Would have with salad or peas/green beans and buttered wholemeal bread. Sometimes a few chilli flakes sprinkled on top of the cauliflower cheese.

having 2 male teenagers I could serve them one cauli head each. plus a mountain of garlic bread. and then a bag of party rings each for pudding...

School lunches are tiny. They use a lot of energy in school, a good bowl of cheese filled sauce over cauli , especially on a cold day like today, sounds perfect!
To be fair the meals at my school aren’t tiny. I often have a school meal and specifically ask cook to give me a child portion which is still a full meal for me and I only have a snack for my evening meal. BUT cauliflower cheese is a great meal that we have frequently!

Some parents would give anything for their child to eat cauliflower never mind choose it!

Me, I've been trying unsuccessfully to get dd to eat it for 14 yrs! I love cauliflower cheese, but hardly ever have it as I'd be ploughing through a whole cauli all by myself for days.

Cauliflower cheese is freezable, right? I'm the only one in our house who eats cauliflower (I've had it raw in salads before now), and the idea of freezing portions of cauliflower cheese for a warm winter lunch while working is very tempting.

Cauliflower cheese was always a main course in my house when growing up. My mum used to serve it with bread and peas!

You can cook the cauliflower for a couple of minutes cool it and freeze it but better still make a big cauliflower cheese and freeze portions.

Definitely over thinking. Having just cauliflower cheese every single night maybe an issue, cauliflower cheese one night isn't.
