To ask for tips on how to cook the perfect steak?

DH wants steak on Friday and I am already worrying that I will mess it up. The last two times I have cooked steak it was overcooked and he couldn’t eat it so please could you offer me tips to cook the perfect medium rare steak so we can have a nice dinner?

I throw in a knob of garlic butter in the last few seconds of cooking.
This method has never failed me!

This pretty much covers it but then for me the key is resting it before serving it. 5-10 mins wrapped/covered in foil so it doesn't go cold.

Non stick pan.

Get the steak out of the fridge for 15 mins before cooking.

Cut some of the fat into small pieces and fry in a hot pan. No need for oil this way and all the flavour goes into the steak.

Put the steak in the pan,it should sizzle. Leave it for a couple of minutes and then flip it over, add a good grind of salt and pepper .

Another 2 mins and then if it all looks sealed ,you can pick up with tongs and hold the edges down if they need a bit extra.

Wrap in silver foil for at least 5 mins to rest.

This all depends on how thick the steak is obviously but that what I do.

Let the steak get to room temperature.
Use a decent pan and have it get to quite a hot temperature with a dash of oil rubbed over the steak.
Put steak in and leave for 2/3 mins, do not touch. This is the important bit, only touch to turn it over and cook for a further 2/3 mins depending on thickness/preference. Steak will not cook properly if you jiggle and turn it frequently.
Allow to rest on a warm plate for a few minutes and serve.

Absolutely essential to get the pan to be hotter than the sun. Get it on to max heat and then wait and wait and wait until it’s smoking

Oil the steak, not the pan. Season the shit out of it.

When it’s in the pan do not move it, it needs to seal to get the flavour in

Make sure it’s well rested after

Exactly the method above, with added cracked black pepper. Use a little more salt (ground sea salt) them you think you'll need. Simple but delicious!

As above....

But if you like steak and WANT to cook it for yourself...

You need to bring it down to room temperature before cooking.
You need to season it well.
Cook it for one minute very high heat, then turn and do it for another minute very high heat. Repeat so each side has been cooked ofe two minutes on each side.
Melt butter into pan whilst cooking.
Remove from pan and leave to rest in a warm place for at LEAST 3 mins.

Cutting up small fits of fat and frying these off and cooking steak in the residual fat in the pan is the way to go!

Also season your steak a good half hour at room temp, the salt draws moisture out, dab your steak with kitchen roll to get rod of this. It will cook beautifully

I've never had a steak so badly cooked I couldn't eat it. Thats just being an arse!!!

It might have been overcooked for his tastes, but what a waste of food.

This is how DH does it as I also used violetbunny’s method!

Screaming hot pan, room temp meat if you're cooking it rare (because you're only going to char the surface basically. If it's chilly inside when it goes in the pan it'll be clammy & lukewarm on the plate).

Slap it on the pan & LEAVE IT until a gentle pan tilt makes it slide - this shows the surface is sealed. This won't work if you're using a ridged griddle style pan, which does leave nice markings, so practice with a nonstick frying pan until you're confident.

Flip it, same again - if it's not sticking it's cooked! Plate it up & leave for 10 minutes whilst you're doing a salad etc to go with. It won't go cold, it'll continue to transfer heat to the 'rare' centre & it'll taste better if it's not scorching hot anyway.

I hate to say it but a good quality steak from local butcher and definitely rest for 10 mins or so under foil before eating.

Don’t be tempted to over cook.
