Should be fine. Just remove the eyes and stalks, and any bits going green (can't see any in the photo, but it sometimes happens round shooting bits.) Then cook as normal.

Just rub them off with your fingers, it's much quicker. They will be fine to eat.

I often serve potatoes that had sprouted. I just make sure that our self-designated food standards inspector (DS1) isn’t around when I pick the shoots off.

They are perfectly good potatoes.

The only thing wrong with them is that they have marginally fewer nutrients (because you've cut them off).

They don't appear to be wrinkly or mouldy, so you're fine.
