Hi everyone

Just trying to get some sleep quick meal ideas as I'm bored of the same old!

We aren't fussy, eat all veg, meat, fish etc.

Just had a good one tonight. Wedges of red onion, 4-5 whole cloves garlic, chunks of red and yellow pepper, a punnet of whole cherry tomatoes or chopped vine tomatoes, block of feta cut into cubes, drizzled with some olive oil and red wine vinegar, salt and pepper. Roasted in the oven at 180C around an hour (stir occasionally), at 45 mins add some torn up fresh basil or dried basil if you don't have it.

Mixed all together after it's cooked it makes a lovely sauce for pasta, or chicken thighs (roast with it), or I put some chunks of sourdough bread in at the beginning which toasted beautifully. Lovely and creamy and flavoursome.

Chilli or one of my favourite really quick mid week meal that is quite cheap too .
Pasta sauce any kind or make your own with any veg I use onions & mushrooms with mince , brown the mince off and the sauce .
Put in casserole dish with fusilli pasta or whatever you want add grated cheese on top , Bob in oven for 20 minutes and serve with garlic bread .
It’s quick , filling and everyone in the family will like it .

Marinate some lamb chops over night or a few hours I n natural yoghurt, Madras chilli powder (mild or soft), turmeric powder, salt, garam masala powder.

Fry in olive oil in griddle pan. Takes 10 mins to took and lovely with buttered fine beans/broccoli.

Marinated chops keep for 2-3 days in the fridge when marinated.

A really easy quick pasta meal which is very tasty!
Fry chicken, veg (I use onions and peppers) and some garlic, add some cajun spice. Then add half pint of chicken stock and a wee tub of double cream. Let simmer for 10mins while you cook some spaghetti. I thicken the sauce a bit with cornflour but this isn't necessary. Then mix the spaghetti through and serve. Yum!

One of my favourites is to fry off diced chicken (whatever I've got in), then add and fry onion and peppers (and courgette if I've got it) and then either tinned Toms, garlic, herbs etc etc or sometimes a jar of tomato pasta sauce, chuck in some wine if I have it open. Put that in the base of a pyrex.

While you were cooking the first bit you also cook some pasta (rigatoni preferably, penne would do), then you mix the pasta with black pepper, crème fraîche and a bit of grana padano. Plonk it on top of ( not mixed with) the chicken and veg sauce. Top with plenty more grana padano (melts better than parmesan). Stick it in a hot (200 fan) oven til the cheese is melty and crispy.

My favourite thing about this is you can do
a massive batch of the chicken stuff and freeze it and then when you make it another day it's literally just a case of cooking some pasta, microwave the sauce and chuck it all together.

One of our faves is a quick and easy version of laksa - pack of stir fry veg in the pan, then a couple of big tablespoons of red Thai curry paste. Once that’s cooked add 2 tins of coconut milk and a mug of stock. Once that’s heated through add prawns 5 mins from the end and serve over noodles. Sprinkle some cashews and spring onions on top to serve if you have them.

Chicken breast smothered in houmous on diced courgettes and pumpkin (with or without morrocan spice mix). The houmous gets all over everything and tastes amazing.
Burgers with brown buns, goats cheese and sweet potato fries.
Sweet potato and feta quesadillas
Frittata, any kind
Risotto then stuffed peppers with leftover risotto
Spinach and feta strudel
Quails in carrot sauce

Look up tomato and mozzarella orzo on bbc good food.
It's so simple, throw all the ingredients which are staples into a dish, cook in the oven for 20 minutes then add the mozzarella back in the oven for 5 then done.

Baked feta pasta

(Although you can use other ingredients)
1 pt. cherry or grape tomatoes
1 shallot, quartered
3 cloves garlic, peeled and smashed
60 ml extra virgin olive oil
Salt
Chilli flakes
1 (200g.) block feta
3 sprigs thyme
285 g pasta
Zest of 1 lemon (optional)

DIRECTIONS

	Preheat oven to 200°C (180ºC fan). In a large ovenproof pan or medium baking dish, combine tomatoes, shallot, garlic, and most of the olive oil. Season with salt and chilli flakes and toss to combine. 

	Place feta into centre of tomato mixture and drizzle top with remaining olive oil. Scatter thyme over tomatoes. 

Bake for 30 to 40 minutes, until tomatoes are bursting and feta is golden on top.
Meanwhile, in a large pot of salted boiling water, cook pasta according to package instructions. Reserve 120ml pasta water before draining.

To pan with tomatoes and feta, add cooked pasta, reserved pasta water, and lemon zest (if using) to pan and stir until completely combined. Garnish with basil before serving.
