To throw away the chicken every week?

I know IABU but I need to be shamed so I start doing something about it!
Family of 4, we have a roast chicken every week, we eat the breast meat and then I throw away the rest every week, I hate doing it but I'm too lazy and unimaginative to think of what to do with the rest of it!
Please shame me and tell me what you do with yours, I'd love to make it stretch to another meal!

I'm not big on boiling the carcass for stock, so I just stick it in a bag in the fridge and my friend comes and collects it (from the doorstep, SD etc etc) to make soups and stocks. Waste not, want not around here!

Remove the legs before roasting and make a casserole whilst roasting the rest. Brown the legs, add tinned tomatoes, chicken stock cube, plus if wanted, carrots, potatoes, sweetcorn or whatever you fancy. Casseroles improve with reheating so dinner sorted for next day. Add chopped ham/bacon whilst heating.

there are so many leftover chicken recipes and if you have kids you can get them involved. keep leftover gravy and veg too (make extra) and make a lovely chicken pie, you will be springing out of bed on Monday in anticipation of the fun making it and a lovely evening meal. OK maybe a bit of an exaggeration but during these crazy times... (I'm retired and bored during lockdown and wouldn't have always had this attitude!!)

This thread encouraged me to buy a chicken today!

One of my very favourite things to do with leftover chicken is to dice it up small and then cook small diced onions, celery and carrots in olive oil. I make a bechemel sauce, mix the vegetables and chicken together and us it as the filling for savoury pancakes. I wrap the pancakes into aprcels and top wit grated cheese then put in the oven. It is SO good.

Otherwise I do a standard chicken soup and sometimes chicken fried rice- but invariably the pancakes when we have a roast chicken.

Cold chicken, chips, beans. We have just started eating this again after 20 add years and it is a brilliant trip back to when we were kids.

If an animal has to die as a food source, the absolute least you can do is eat it all, otherwise it was killed for nothing and that is utterly unforgivable.

Strip off chicken meat and throw into the wok with a bag of stir fry veg. Add noodles. Instant, fairly healthy meal on 25 minutes

Chicken noodle soup all carcass in saucepan large water bay leaf boil then simmer couple hours strain chicken put water meat back in pan add seasoning veg etc last couple minutes some vermicelli ta da soup for Monday lunch or dinner.Smile

In OP’s defence, I do know what she means about the breasts from a whole roast chicken tasting so much nicer than when you buy and cook chicken breasts separately.

Anyway, OP, hopefully you’ve got lots of new ideas to help next time. God though, I love a chicken sandwich on nice bread. Glass of fresh orange juice. Best lunch ever.

How bloody wasteful!
Chicken and rice, chicken in a sauce with pasta, chicken sandwiches. Another 3 good meals you could be making. And there's hardly any effort having to be made

I’m amazed, we are a family of 4, two adults and 2 teens, a large roast chicken mainly does us for just one meal, we eat both breasts with our Sunday dinner, along with the best of the other meat, we may possibly get enough for sandwiches the next day, the cats get the scraps, how an earth can some of you make a roast chicken last for 3 meals.

Leave out for the foxes, if you get them.
It is a waste of food, especially as an animal has died for your meal and you’re throwing a bulk of it away.
Either buy a crown or chicken breast.

Once chicken is cooked you can strip off meat and freeze. Then use for curry at a later time.
That bird died for you so the least you can do is eat it all.

Oh my goodness... Please try to actually value the chicken by eating all of it, if you're going to eat it at all.

Please remember that not all animal farming practices are equal. For instance, most British lamb is raised on upland hills in natural environments.
Poultry farming, on the other hand, is one of the most inhumane forms of animal husbandry. A couple of months ago, there was a programme on Radio 4, saying that the slaughter house had noticed that many of the hens being bred for meat were blind. Apparently, it turned out that this was a genetic mutation which was occurring naturally to protect the birds from each other in the horribly cramped environments that they were growing up in (the blindness protected each other from feather pecking etc. Horrible.)

We spatchcock our chicken so it's easier to take apart once it's cooked. It also makes it more juicy and takes less time. We usually have either leg meat or a whole breast left over. We pull the meat off the bone and use it in pasta or fried rice. For delicious pasta, use a tin of mushroom condensed soup and heat with pieces of chicken in. Add mushrooms, sweetcorn and black pepper as preferred and then add cooked pasta. Or use the same mix for a pie filling (Mash or pastry). For fried rice, cook and cool rice. Prep chicken and anything else you fancy such as peas, sweetcorn, mushrooms etc. Heat ingredients in a pan and then add oil to fry. We sometimes fry egg in the rice too.

Pick all the meat off the carcass and have easy quesadillas for dinner, lightly oil a pan, add a tortilla, shredded chicken, some shop bought salsa and come grated cheese, top with another tortilla and cook each side for 3-5 mins.

Add carcass to a pan (pressure cooker if you have one) and make stock - lots of tips on how to do this online. Freeze the stock or use in soup with the chicken you stripped off the carcass.

Add to shop bought or home made curry sauce, use for sandwiches and salads!

Sandwiches, salad, risotto, curry, cooked through with cream onions and peas, soup, cold with jacket potatoes & salad, cook up with veg cover with pastry & you have a pie. Seriously, Google some recipes for leftover chicken or as PPs have said, just buy breasts if That's all you really like.
