Veganuary - what have you been eating? Ideas needed!

I saw this being made on Saturday Kitchen and, even though I'm not doing Veganuary and am not normally a fan of tofu, thought it looked lovely:

Not doing veganuary /dry january.. if I want to change what I eat /drink it's not on the basis of someone else's marketing ploy.

What kind of foods do you normally eat OP?

We make lots of Indian dishes too, just swap meat for your favourite veggies in a curry (sweet potato holds up well) or make dahls/chana masala etc with breads, pickles –all the good stuff.

Plus things like spaghetti bolognese with mushroom mince or lentils.

I don't like a lot of meat subs or tofu, but saying that Beyond Burgers are amazing (can get at Tesco) if you fancy a burger and chips night. Get some vegan mayo, onions, tomatoes etc.

There are LOADS of fab recipes on Pinterest. I also really like the BOSH recipes. I have one of their books and although I haven't used it, they have BOSH tv too.

I adapted this from an old Delia recipe and it's lush all year round.

Roast a selection of veg. One tray hard root veg (Carrots, parsnip, celeriac, squash, beets etc etc). Coat in oil, sprinkle with whatever you have in the spice rack- cumin, paprika, jerk seasoning, whatever you fancy. - 45-60 mins until cooked through and caramelized. One tray of softer (onions, leeks, peppers, fennel, tomatoes, courgettes) -25-30 mins. Or for smaller portions add the soft veg half way through

Make couscous- plenty of cheat stuff to make it easier.

layer the roast veg and juices into the couscous. If you can find it, water down some harrisa paste with water and lemon juice and dribble over. If you eat dairy yogurt and feta are great additions

Product (rather than meal) wise I can highly recommend:
Oatly milk, yoghurt and ice cream, Hotel Chocolate or Nomo vegan chocolate, Rhythm 108 chocolate, Jus Rol Pain Au Chocolat, Tesco Free From Fromage Frais and Violife cheese.

I'm not doing veganuary but i like vegan food - we eat loads of different curries with veggies, chickpeas or lentils. Pasta sauces without meat. Bolognase made with lentils rather than mince. Stir fry with tofu. Sweet potato peanut stew (loads of recipes online, so yummy), sweet potato chilli.

One of my current favourites is a portobello mushroom burger. Usually just grilled as is, in a nice roll with vegan mayo and sriracha, and whatever bits you want (salad etc), but occasionally I'll panko breadcrumb it first, if I can be bothered with the faff.
