AIBU to ask what you usually eat Monday-Friday?

I've googled til my eyes have gone square but am struggling to find anything quick, easy (ideally freezable) and family friendly that isn't a stew, curry, bolognese or chilli?!

I feel like i rotate the same meals (or very similar variations) over and over and quite frankly i'm so bored!

Aiming to cook more (to eat more healthy food, and save some pennies) so would love any inspiration you care to share.

Lol we love stews and chillis here. I meal plan every week so just looking back on some of our weekday meals now. We are also vegan so these are all made with vegan ingredients but can also be made normal:

Spaghetti carbonara
Homemade soup and crusty bread
Black bean tacos
Fajitas
Toad in the hole
Roasted vegetable and cous cous with hummus and roasted chickpeas
Mac and cheese
Slow cooker vegan sausage casserole
Burrito bowl
Pasta bake
Stir fry

We only really have dinners together and look forward to a good meal every night. I do alot of prep on a Sunday though. Make my rice, pasta, cut up veg portions, marinate meats etc. It makes such a huge difference. Weekday dinners are then super quick to prepare.

Agreed - Simply Cook is fab. It's just the herbs/spices/flavour pots but the meals are great and my kids love them. Best for us are Wild Mushroom penne, balinese curry, chicken katsu, italian ragu, cuban mojo pasta and lousiana linguine. We use 2 or more a week.

@namechangefail2020 do you have a recipe for the Trinidadian stew please? It sounds like something we'd love! Afew more ideas on regular rotation here,

One of my favs is to add half/third, depending on jar size of tikka or jalfrezi sauce into an oven bag containing a small chicken and roast. Comes out so delicious and you can get the homeworks done whilst its in the oven. Depending on time available I will do baked spuds, chips or the best if I have time is jolloff (with bacon) rice on the side. Guarantee it will be picked clean and the juices combine to make such a tasty sauce.

Macaroni cheese
Tuna pasta bake
Hoisin meatballs and noodles
Paprika baked chicken legs and mash

Some of the meals that go down well in my house!

We have started doing Gousto a few nights a week for this reason exactly. I would say i’m a pretty good cook but the constant thinking of what to cook was driving me round the bend.
We have not had one bad meal from them yet. Total game changer for me!!!

Wolfcub a marinade of oil, garlic, salt and sweet smoked paprika. My kids love it!

Another really simple dinner we have is chicken marinaded in lemon, garlic and oregano.
We have it with chips, flat breads and salad

Over the last week weve had

  1. Salmon, pan fried, with potatoes (par boiled then fried with chorizo and red pesto). Side salad.
  2. Oven pizzas, with a rocket and parmesan salad
  3. Chilli with nachos and cheese
  4. Burgers with nice fillings, corn on the cobs
  5. Risotto with prawns and chorizo
