Applying for jobs and staggered interviews. What to do?

I've got an interview for a job in December. I've applied for two more jobs and would prefer one of these. Worried I will be offered the first job, but will have to turn it down due to not hearing back soon enough re my other applications, then end up not getting any job at all. Hope that makes sense. Wwyd in this position?

What is your notice period? I suppose ultimately it's a risk either way it depends how desperate you are for a new job

My notice period is a month where I am at the moment.
