Either version is an attempt to replicate the sound of the horn presumably - so either is correct depending on the noise your car horn makes.

Clearly 'beeped' is onomatopaeic, so 'bibbed' is a different but equally legitimate verb.

Bibbing and beeping are different sounds.

A bib is a short, gentle noise that means something a bit like a polite "excuse me".

A beep is a longer, louder noise that means something like a yelled "oi, you, what the hell do you think you're doing?"
