Not an Aibu just looking for a quick reply.

I am a bit sensitive about food after a recent bad bout of food poisoning.

I have some beef mince that goes out of date today. I have no room in the freezer and want to use it for a meal tomorrow. (Can't today as unexpectedly going to be out).

If I cook it today and refrigerate it, will it be ok to put in a lasagne tomorrow?

Yes and I have found that lasagne makes better if you cook mince the day before.

Yes, but I'd go the whole hog and make the lasagne today. Teatime-you tomorrow will love you for being so organised.

I would cook it tomorrow without a second thought. Minced beef tends to go a funny colour and smells when it goes off. And it's something you cook well, usually frying it and then cooking it in sauce.

I once made a ragu with 4 day over mince. It was delicious.

I cooked some mince from Aldi on Friday that went out of date on Thursday. Ds and I ate it in a pie and we've both lived to tell the tale.If it's been refrigerated and doesn't smell off, it will be fine.
