Called pest control - what can I expect when they come out?

We're in a little cottage semi-rural.
We've had issues with field mice for a couple of months now. Initially I thought we managed to sort it but they are definitely back / or never went.
They are only on the floor mainly in the kitchen where I think there's a potential access point behind the old cooker as the slate tiles on the wall behind it do not reach all the way to the ground leaving a gap.
There has never been a single sign on any other surfaces in the home just the downstairs around the cooker/ under the bottom cupboards (they chewed through the washing machine pipe and flooded the kitchen yesterday Angry)

Also what's much more worrying is we have 3 times now spotted a rat coming from across the lane where the bins for the street are and hanging around the grate where the water from our kitchen tap goes. I don't know if it's pregnant or fat but it rather large and slow. I'm petrified it will find a way into the house and have babies (if it is pregnant).

I called a pest control company and someone is coming out on Monday . It's a one off fee for 3 visits -does anyone know what the procedures are and what I can expect?
The chap on the phone was lovely but in a rush.
I'm trying to make sure there's no obstructions around the cooker so he can have a look but will they just be downstairs or will they want to inspect the whole house?
Do we have to be prepared to leave? We have a Ddog as well so should I let them know in case they are using poison (if they are).
