To ask for a quick bacon and pasta type recipe?

I know I could Google it but MN always gives me better ideas.

I can't be bothered cooking dinner (I"m in Oz, it's 5.00pm here) so what can I make that's bacon and pasta based please? Some sort of Carbonara type job?

We often have pasta, bacon and pesto on our busy night. Do you have ingredients to make, or a jar of, pesto?

My favourite easy creamy pasta is just 2 parts pasta to 1 part soft cheese. Then add whatever extra bits you want, bacon, chicken, spring onions, tomatoes etc.

So 200g pasta to 100g soft cheese. Or if I want it slightly more creamy maybe 200g pasta to 150g soft cheese.

Fry some fine chopped onions and chopped bacon. Add cooked peas, add cream & Parmesan. Done. It’s divine.

Chop bacon into little bits, fry until crispy, add some garlic and chopped onions (I usually put broccoli/chopped carrots in at this stage), fry a little longer. Add some butter then flour straight into bacon/onion mix (saves doing it in a separate pan!) to make a roux, gradually stir in cold milk until you have a creamy white sauce, add grated cheese, add pasta et voila! Season and eat!

Fry some chopped bacon, quarter fresh toms and chopped garlic in a pan. Add cayenne pepper. A bit of stock , cream cheese and then right at the end a whole load of fresh spinach to wilt in. Chuck over the cooked pasta

Chicken and bacon Cajun pasta with spinach is a household favourite for us.

I use soft cheese and 500ml of chicken stock, reduce for a creamy sauce

Carbonara:
Bacon fried off in butter
I whole egg
I yolk
Cook pasta, retain 1 big spoon of pasta water, take off heat, add egg mixture very quickly or it scrambles.
Lots of black pepper, lots of cheese.

Amatriciana:
Fry off a small amount of onion in olive oil
Fry off bacon
Add red wine and tomato sauce
Cook for as long as you can.

One of our favourites is bacon & leeks fried off, add creme fraiche and cheese then stir through pasta.

Roast bacon and broccoli in the oven until the broccoli is all charred. Stir through some cooked pasta, creme fraiche, lemon juice and flatten down, sprinkle the top with Parmesan and breadcrumbs and put back into the oven until crispy.

Chopped Bacon and leek fried, add tub creme fraiche and teaspoon of wholegrain mustard. Stir to heat, add bit of pasta water to thin. Serve over pasta.

Fry off Chopped bacon, garlic and chilli flakes together. Add tin of tomatoes and tin of water chuck in pasta and cook all together covered with a lid (about 20 mins).serve with parmesan and only 1 pot to wash up!

H’s pasta.

Fry onions.
And whatever veg* and if you are lucky a few rashers of bacon from the fridge.
Stir in Creme Fraiche
Stir in cooked pasta
Serve with grated cheese and lots of pepper

*Ideal veg would be peppers, mushrooms, baby corn but others work.

I usually just do it with cheese sauce and bacon on top.

Or use soft cheese and add bacon and spring onion. Or red onion.

I usually buy chirozo coins from supermarket for my emergency pasta dish!

Chopped bacon, red chilli flakes and lots of garlic is all you need. You can add any green veg like broccoli, French beans or peas too.

My carbonara:
Cook pasta
Fry bacon and garlic (use the fat from the bacon, no need for anything else)
Spoon the cooked pasta into the pot with the bacon and garlic with a slotted spoon (this normally preserves the correct amount of pasta water)
Stir in a good amount (30 grams per person?) of grated cheese (grana padano/parmesan but cheddar or even Stilton work for an interesting variation)
Remove from the heat and stir in an egg (I don't mess about with an extra yolk and one egg is enough for 1-2 portions).
Serve immediately.

Boil the shit out of it until the cream reduces and stir through pasta.
