Aibu to ask for your help with what to cook with these ingredients for dinner

I've got:

Brocolli
Chestnut mushrooms
Cauliflower
Maris pipers
Sweet potato
Garlic
Two lemons
Frozen sliced leek
Red onion
Spaghetti

No tinned toms
No olive all, just rapeseed oil

ALL IDEAS WELCOMED please can't be bothered this eve and can't think of what to cook.

Hmmm....no protein...no chickpeas, cheese, tinned fish etc???

You could do spaghetti with garlic but it will not be so good without cheese...although cooked mushrooms added would also be nice. ( this sort of thing..

Also some tosted breadcrumbs on top add crispiness to it.

I would roast the vegetables with the oil and garlic and serve with the pasta. Simple and delicious.

If you have any cheese you could do a really nice pasta dish with the spaghetti, mushrooms, leek and lemon.

I would make a cheese sauce with leek, broccoli and mushroom and have it with the spaghetti. That's if you have cheese, milk, flour and butter.

Do you have any coconut milk and curry spices at all? I would make a vegetable curry with all the vegetables and leave the spaghetti and lemons for another day.

Sautéed garlic, red onions, mushrooms and leeks with lemony dressing (ik no olive oil but rapeseed would do I reckon), with spaghetti? I'd add a few olives/ capers/ anchovies or something if I had any but it'd work without

If you have eggs I’d do a big frittata - leaving the cauliflower sweet potatoes and lemons out of it.

Use either sweet potato or maris pipers as baked potatoes, scoop out inside (mash) and add fried onion, mushroom and garlic into mash then re-stuff centre of potatoes. Serve with a side if broccoli (or if you prefer leave garlic out of stuffed potato and fry broccoli with garlic).

Yes have cheese but also calorie counting so trying to not make anything too cheesey

Even just stir fried broccoli With lots of garlic (do you have ginger?) with either steamed or mashed potato. Don’t know why I say just - I love that !
