Is cheesecake difficult to make?

I know this is AIBU but sorry...I need help! It's DD's birthday coming up and I'm just a crap baker. It's taken me years to realise this.

I can cook well...just not bake. Am I wrong in thinking a cheesecake might be easier? Crushed biscuit base type thing?

I saw a toblerone one that looked easy...is it tricky?

I didn’t like the one made with Philadelphia / soft cheese.

Is there another cheese that can be used?

Cheesecake is easy but so is a sponge, providing you remember a fact. As soon as you add liquid the raising agent begins to work, and you need to get it in the oven as soon as possible, no messing around. If you have an electric mixer, then just put 8 oz self raising flour, 8oz caster sugar 8 oz butter I tsp baking powder and 4 eggs into a bowl, mix until there are no dry bits left and it looks creamy, do NOT over mix. Put it in two greased and floured tins, and bake it straight away.
If you do not get it straight in the oven the baking powder activates because the eggs have made it wet, and once it has done that, it then collapses, leaving you with flat unrisen cakes. My Mum was a beautiful baker, but couldn't make sponges until I taught her this method...she was in her 50s, too!

As everyone else has covered cheesecake, I'll say in my experience chocolate biscuit cake is by far the easiest kind of cake to make, and it can be only 4 ingredients: digestive biscuits, butter, golden syrup and either plain chocolate or a mix of plain and milk chocolate, depending on what you prefer. It also has bashing biscuits in common with cheesecakeGrin

Making a cheesecake can be more time consuming than a simple sponge, but it's fairly easy to do.

I made one using a recipe from Jane's Patisserie - it was a calorie bomb, but delicious! Just remember to use all full fat ingredients for it to set properly.

No bake cheese cake is so simple. If they like galaxy chocolate, melt some of that and throw it in too. Just mascarpone, double cream and the chocolate. It's so good, but if you want just vanilla just add some vanilla flavouring in, one teaspoon is enough.

The easiest birthday "cake"I have ever made was a pile of chocolate brownies dusted with icing sugar. The candles at different levels make it look fun. Donna Hay's store cupboard brownie recipe is pretty foolproof, you can even use packet mix.

I always use melted white chocolate in my cheesecake as it helps it get a firm set and it quite a subtle flavour so goes well with others (raspberry/strawberry/coffee/baileys in particular!)
I use a mix of mascarpone and cream cheese too which makes it so rich and delicious. I am now going to have to go shopping for ingredients to make one! Yum!

I think they are easy, but so are Victoria sandwiches in my opinion. If you want an idiot proof (not cheese) cake recipe use:

8oz sr flour
8oz butter
8oz sugar
4eggs beaten
2tsp vanilla extract
1tsp baking powder
2 tbsp milk

Mix in mixer or by hand until smoothing but don't worry too much. Put into 2 20cm cake pans, bake 18 mins 190 c gas mark 5 until golden brown (might be 2 extra mins depending on oven) fill with jam, cream and fresh chopped strawberries.

No bake cheesecakes are the easiest thing ever, my 8 year old makes them on her own. Sponges are easy but they’re also easy to get wrong - stick with what you’ll be comfortable with, just throw whatever u like on to decorate!

I like the taste of no bake cheesecakes but mine never look good once sliced and turn into a sloppy mess
