To be pretty sure my toddler is 95% potato?

I’m sooo out of meal ideas and the poor kid gets a baked potato, beans and cheese at least 5/6 times a week!

Help me please 😂 We’re vegetarian so preferably meat free ideas.

How unhealthy. And you are setting himself up to be a picky eater. Being vegetarian is a fairytale forrest of yumminess when if comes to food.

Put in more effort op. You owe it to him Smile and he will go on a food safari and will love it

He eats plenty of variety for his meals thank you. Aubergine lasagna is a favourite, or sweet potato curry. I just needed some more ideas.

I hope your post made you feel better about yourself.

I’m just trying to struggle through working in a full time job from home whilst looking after a toddler and had fallen into a rut with his meals.

i completely relate to you. my go to beyond baked beans is... more beans!

The Young Gums "burrito" bowl with black beans is so good for adults and toddlers.

enough for 2 toddlers + 2 adults:

fry 1 chopped onion
grate in 2x sweet potato
add 1 Tbs tomato paste
2tsp cumin
a sprinkle of smoked paprika
add 2x tins black beans
sometimes i add a tsp of maple syrup, but not necessary!

Let it all simmer.

Serve with brown rice, some cheese & yoghurt on top (beans and rice together create a complete protein apparently).

A bit of salt for the adults!

YUM!

That sounds amazing!!

Currently on holiday in Skye but will be saving that for when I get home.

OP do you have a freezer? I so know that feeling of 'what shall I make?' When DS was small I used to cook big pots of stuff and just freeze in appropriate portions. So easy to just pull something out and heat it.
Yes I do have a freezer. I’m just struggling a bit right now with working full time and nursery being shut. I need to be more organised and freeze stuff.

Thank you to everyone who has posted helpful advice.

To be clear he does often eat what we eat. Usually as leftovers for lunch though and then I struggle with dinner. He eats plenty of variety, plenty of fruit as snacks.

Savoury pancakes are always good - spinach, tomato and feta is a great filling

Pesto pasta is quick and easy and you can add sliced fried mushrooms and courgettes or green beans

Paneer and spinach curry? There are some quick and easy ones made with coconut milk.
