To be pretty sure my toddler is 95% potato?

I’m sooo out of meal ideas and the poor kid gets a baked potato, beans and cheese at least 5/6 times a week!

Help me please 😂 We’re vegetarian so preferably meat free ideas.

Why not just try vegetables then?!

Raw broccoli and carrots?

Can you swap the potato for sweet potato? My toddler loves dipping stuff so hummus, aubergine dip, nut butters etc. Maybe savoury pancakes or stir fries?

Gnocchi (I know, but it’s in a sauce and mixed with four so technically potato based rather than an actual potato) in a tomato and basil sauce.

Pasta with pesto and soft cheese is a favourite here, and dead quick.

I make a bean salad that's a knock-off of a M&S one - tin of kidney beans, drained; fresh sweetcorn - pop both into boiling water for a minute or two, mix with chopped tomatoes and dress with mint viniagrette (I just mix mint sauce with a bit of oil).

Quick soup - heat up some stock/a stock cube in water, chuck in a couple of handfuls of peas, some lettuce leaves and mint, let it come to the boil, then blitz. It's good with cheese on top or a bit of chilli sauce stirred in.

Also agree with @BertieBotts, and you can vary it up with giant cous cous or buckwheat. Giant cous cous has a nice frogspawn-type texture which DD enjoys (because she is Strange).

Most of our vegetarian dishes are pasta, Indian or a vegetable version of Our bog standard meat meals - cottage pie for example .
Most of it apart from the gnocchi takes a bit of preparation and cooking though.

Oh, and we always have our vegetable cottage pie with sweet potato and root veg.
I get the potato boredom.
We constantly eat pasta here.

OP this sauce is packed with veg and even my super fussy 5yo loves it!

We do it with pasta and cheese, or on a pitta with cheese as a pizza.

We are meat eaters but another one my toddlers love is Orange Soup. Basically all orange veggies you can think of - carrot, red pepper, sweet pot, red lentils, sometimes dried apricot - simmered in stock and then pureed till velvety. It is easy to make in advance and then have in freezer in portions.

I buy wooden coffee stirrers and make 'lollipops' (kebab skewers but without the pointy end)

We aren't veggie so ours often have some kind of meat on them but no reason you couldn't do them with halloumi or tofu instead. I usually do them with combinations of sweet potato, courgette, red onion, mushrooms etc.

'Lollipops' also work for fruit or cold 'salady' type stuff (e.g. tomatoes, cucumber and mozzarella balls)

A firm favourite for a quick tea is pasta with tomato and marscapone sauce. Usually the supermarkets have deals in fresh pasta and sauce, if you use fresh pasta it can be in the table in the time it takes to boil a pan of water for a few mins. I often chop spinach into it to make myself feel better.

Tilda do mini micro rice packets for children, mine love the mild curry ones again for a 'quick can't be bothered to think of anything tea'. They have a few vegetables in them.

Breaded mozzarella sticks, potato waffles and peas.

Stir fries - mine like eating the noodles and sometimes they also eat some baby corn, a bit of grated carrot or a mange tout by accident.

Cauliflower cheese, roast potatoes and green veg

Fried rice

DS loves quesadillas, with tomatoes, peppers, mushrooms etc and cheese with some fresh salsa for dipping, take minutes in a dry frying pan. He really likes cauliflower roasted with garlic oil and a bit of smoked paprika, I roast big trays of veg with tomatoes garlic and herbs then semi blitz and freeze in ice cube trays for a healthy pasta sauce, lots mentioned above too stir fries, veggie chilli, daal, chickpea and coconut curry with rice or naan, usually some veg on the side, this week's favourite is purple broccoli which gets dunked in anything. A good minestrone freezes well (leave out bacon) . We're not actually veggie but meat isn't the basis of a fair proportion of our meals, DS eats well

Picnic plate with hummus, veg sticks, quinoa salad etc
Broccoli/pea and cheese pasta

I eat a lot of meat alternatives tbh they're the only dishes I can think of that I don't

We alll love here (especially DH) Mary Berry's butternut squash lasagne. I add red pesto for extra flavour. loads of spinach in it.

Hidden veg sauce Anaba Carmel is a staple here with pasta (although we use chicken) we make our cauliflower 'cheese' with coconut milk that could be added to the potatoes.

Blue oyster sauces are gorgeous with veg stir fry and Noddles.

Ratatouille on baked potatoes lovely too

Sweet potatoe.fries

Loads of lovely veg curries (sweet potato etc) online. I use the Swartz curry powder instead of bloody cruising everything, it's very tasty

We are vegetarian and our toddler loves lentil Bolognese and several vegetable curry dishes. (Not spicy) she wolves both down in no time. She also loves soya beans or merchant gourmet put lentils as a snack.

My toddler loves smashed avacado with two tablespoons of creme fraiche stirred in to pasta! I add a bit of cheese sometimes too - it’s so filling!

He does. Big fan of blueberries, grapes and apples. Breakfast is porridge made with whole milk.

Just dinner I struggle with.

He's fine then, stop worrying. Or try a pasta dish involving tomatoes (& cheese :-). I often think I could live on tomatoes and cheese.
