To be pretty sure my toddler is 95% potato?

I’m sooo out of meal ideas and the poor kid gets a baked potato, beans and cheese at least 5/6 times a week!

Help me please 😂 We’re vegetarian so preferably meat free ideas.

My mum used to make what she called Welsh Rarebit. It was basically scrambled eggs mixed with grated cheese served on toast. Grin

I found some lovely cauliflower hash browns in co-op recently, very nice and no too 'cauiflowery'. Would be great with veggie sausage, egg, beans etc. Or in a wrap with some grated cheese.

We’re veggie, and over the last week we have had:

  • Mixed bean ‘chilli’ with rice (very little chilli in kids portions)
  • potato & chickpea curry
  • homemade falafel w/ humus, roasted veg & cous cous
  • veg & lentil tagine
  • pasta pesto w/ olives
  • bean burgers w/ salad & wedges


My kids are 4 & 7 but our menu has been pretty consistent since they were tiny.

Veggie sausage and mash? They don't have to be meat replacer - Glamorgan Sausages are just mash and veg, Bosh are veggies or Cauldron do a Mediterranean veg.

OP do you have a freezer?
I so know that feeling of 'what shall I make?'
When DS was small I used to cook big pots of stuff and just freeze in appropriate portions.
So easy to just pull something out and heat it.

I am not vegi but this dish is devine! Might be something you can enjoy as a family (it’s one of the few dishes mine eat with the adults!). Don't bother adding the liquid aminos but the rest of the ingredients are easy to obtain and keep in the cupboard. For the breadcrumbs I use panko bread crumbs. If there are meat eaters in the house a sprinkling of crispy bacon is an added taste sensation when dishing up.

i completely relate to you.
my go to beyond baked beans is... more beans!

The Young Gums "burrito" bowl with black beans is so good for adults and toddlers.

enough for 2 toddlers + 2 adults:

fry 1 chopped onion
grate in 2x sweet potato
add 1 Tbs tomato paste
2tsp cumin
a sprinkle of smoked paprika
add 2x tins black beans
sometimes i add a tsp of maple syrup, but not necessary!

Let it all simmer.

Serve with brown rice, some cheese & yoghurt on top (beans and rice together create a complete protein apparently).

A bit of salt for the adults!

YUM!

Sorry but giving this child baked potato, beans and cheese that many days a week isnt doing them any favours.

Might sound a bit blunt but let your child eat meat.....and some vegetables perhaps?? The most important thing is giving them a suitably balanced nutrition plan rather than forcing your beliefs on them. If they decide to become vegetarian later in life them all well and good.

roasted veggie wraps were always a hit with mine - broccoli, cauliflower, sweet potato, squash, courgette .... anything you have in. Small chunks.

Serve with things like cream cheese or tofuti, salsa, guacamole, sweetcorn etc, with a wrap. They make their own and put in what they like.

Try Tival sausages - veggie hot dog sausages, never met a child who didn't like them, we would boil them then chop them up and put in the wrap or make a hot dog and serve with salad and wedges.....

I’m also veggie along with DP and would say I have the diet of a toddler. We have pizza, baked potato, Quorn nuggets, meat free chicken strip fajitas, curry (bland🤣), spaghetti... just normal stuff but vegetarian. I eat a lot of meat replacements and also load up my plate with veggies. I must be doing something right as my iron levels are great (I’m pregnant so tested often) and I don’t have a fab diet! Definitely look at Morrison’s veggie range it’s so good

Mushroom risotto. Make extra then next day mix with egg and make fritters.

Lentil cottage pie

Stir fry with strips of omelette

Mash tinned mackerel with tomato sauce into couscous, add peas and sweetcorn that you just need to drop in boiling water from freezer, or grate carrot and courgette. I eat it too, just add olives and capers

Mackerel is fish though, the OP is veggie.

Toad in the hole with fake sausages? I know you don’t like meat replacements but he might like them, and it’s another way of eating eggs.

Hello! I'm not vegan but I'm trying to go more in that direction and eat non-processed vegan meals whenever I can. Posting links to some of my favourite recipes below for you - although you might need to adapt some of them a bit and reduce or remove spice to make them more kid-friendly?

Borlotti bean and puy lentil chilli (makes quite a lot so you could eat it a few different ways)

Coconut crusted tofu

Shiitake stem kinpira (the shiitake are optional, most recipes online use e.g. just carrots and peppers, traditionally I think it uses burdock root but I haven't been able to find it)

Peanut crusted tofu with stir fry noodles

Yellow split pea dahl

Since you eat eggs, you might also like this, I remember it being pretty good:

Omelette strips in tomato sauce

I also made this for the first time tonight and it was really good! You just have to be careful to get your ingredients together before you start cooking or you might burn the sauce like we did. Blush (If you make the shiitake stem kinpira above then you can use this recipe to use up what's left of the mushrooms Smile):

(Or if you're wanting something much less complicated... maybe try something like the Meridian peanut butter on toast, sprinkle some sesame seeds on for extra iron etc. and add some banana slices on top or grapes on the side?)

My son who doesn’t like bread likes:

Cheesy quesadilla: cream cheese, salsa, mozzarella and some veggies on the side.
Burritos: beans, veggies, sour cream, salsa, mushrooms rice in any combination
Tortellini with a cream sauce and veggies
Mushroom “burger” with fries: either one big mushroom cooked and cheese put on top with some veggies and ketchup on the side, he doesn’t have bread but that’s just his persona choice. Or we just get a kid of smaller mushrooms and chop them up and cook and then stir in some mozzarella on the pan or put a slice of cheese on top.
Yoghurt with stirred in cereal and berries or veg.
Tortilla pizza with mushrooms, pineapple and cheese.


Sides:
Broccoli
Avocado
Tomatoes
Cucumber
Fruit

So mostly anything on a tortilla for him.
