Meal inspiration

What are your go to meals during the week? I’m not a great cook, looking for some ideas to mix it up a bit, pretty simple but tasty meals to cook for two? Any ideas greatly appreciated!

spaghetti carbonara ( I use quorn veggie bacon as am trying to cut down our meat consumption)

lord woolton pie (you can freeze half of it since there is only 2 of you)

turkey meatballs - you can have them with tomato sauce and spaghetti

I also use most of the recipes off of the change4life smart recipes app

I’m not one for cooking from scratch most of the time so these are usually jars of sauces etc but these are things we have in a typical week as an example.

These are meals we eat on a regular basis:

Spaghetti bolognese
Chicken pasta bake
Lasagne
Chilli con carne
Curries
Enchiladas
Fajitas
Quesadillas
SF chicken salad wraps
Lamb meatballs in a spicy tomato sauce with rice

I have both PON books and also look on the Slimming Eats website for inspiration too.

I batch cook the below and freeze for through the week. More so of a winter when it's cold.

Lasagne
Spaghetti bolagnaise
Indian curry
Chinese curry
Chilli
Shepherds pie
Chicken or beef in red wine

Stir fry ... with whatever I have that needs using up, shepherds pie type thing with Turkey mince and sweet potato topping instead of normal potatoes, roasted veg... with anything, Turkey mince Bolognese ( use leftovers for shepherds pie) , omelettes... jerk chicken with coconut rice and green beans
Currently living somewhere where choice of ready meals and pre made sauces are very limited and expensive so lots of homecooking....which I'm getting very bored of.

My standby is pesto pasta: 1 jar green pesto, 1 tin chopped tomatoes, 1 tsp sugar. Makes enough sauce for 2 nights and keeps in the fridge for 3 days. Make the pasta fresh though.
