Lentils and rice with little meatballs, dates and raisins, OR
Chicken stewed with spinach and dried plums?

(I'm from the Middle-east, btw, both these were fairly staple dishes growing up, esp. the lentils and rice)

Lentils and rice, but do you need dates AND raisins? Wouldn't 1 fruit be enough in it?

The lentils and rice are great. Perfect for when you have vegetarian / vegan guests + meat eaters. Perfect for my household where DD likes "fancy" and DS will only eat "beige" food.

Cook rice as you usually do. Cook Lentils separately. At some point, combine the two. Choose whatever proportions you like (more lentil-y, more rice-y). Add a knob of butter and let "settle" or "come together" on low heat. This in itself is a complete dish, btw. pro hint: the dish is very generous and gives a lot, don't cook as much rice and lentils as you think you need. (I have memories of adding sugar to my plain lentils and rice, but now would never)

the toppings is what makes it.

For meatballs:

Spice up some ground beef with whatever spices you like, Traditionally I would use turmeric and cinnamon. Shape into little meatballs. Fry up in very little or even no oil.

Slice onions, and start frying.
As they are close to being done, spice onions (with turmeric and cinnamon, natch)
Add raisin and/or chopped dates.
The dried fruit should not be fried a lot, only a couple of minutes to kinda heat it through and mix properly with the spiced friend onions.

Allow eaters to serve themseves, with whatever combination of meatballs/fried onions, dates/raisin they like.

The great thing about the lentils and rice dish is that it is very customizable (so long as you have the basic rice and lentils, of course). So if you don't want to have the sauted dates or whatever on your rice, you just don't add it. Perfect for housholds with different tastes.

The chicken is really nice too, great flavour. My dad has sent me bags and bags of dried plums which are taking up all my fridge and freezer space (I mae the mistake of saying how much i like this dish ast time I visited) so we are eating a lot of that atm.

Recipe for chicken, spinach and plums:

Not being smart here, but seriously it is exactly what it says.
Start the chicken, cooking with very little water on low heat.

Fry onions (we're big on fried onions). As they start to golden, add the spinach and a few plums. (it shouldn't be primarily plums, iyswim. They're more there for flavouring?)They shouldn't fry much, more like a gentle saute.

Add onion/spinach/plum mixture to chicken.
Let stew for an hour or so. The plums may have kind of disintegrated in the green spinach base.
Serve with plain or saffroned rice.
Make sure you don't break a tooth on a hidden floating plum stone.

You can also omit the spinach, and instead used tomato paste with the dried plums, in which case it would be known as "chicken-and-plums". :)
