Looking possibly for advice more than anything. 30 years old, wanting to retrain as a nurse or paramedic. Currently work in hospitality.

Has anyone done this? If so how did you go about it?

I did, I used to work in a call centre, I retrained as a Midwife. I had to do an access course then a 3 year degree. Nursing is a degree course or you can train on the job as a nursing associate. You can study paramedic science at university, I'm not sure whether there is another route.

I would advise you to look in the university websites to fine the course requirements. Transferable skills from paid or voluntary care provision is valuable to your application for transferable skills, you could maybe consider becoming an NHS volunteer?

You are young. Do it. If you feel restless and unfulfilled now, it will only get worse as time passes.
