Freezing Coleslaw

Has anybody had any luck/disasters with freezing coleslaw? I got a mahoosive Tub in my Tesco delivery and won’t eat it all before the expiry date. Any hints/tips to share?

Yes, IAPBU for not eating it all tonight.

No that won't freeze well. I'd chuck it in some kind of soup tomorrow. I know mayo is not a soup ingredient but if you put enough other stuff in it'll be ok. And you can freeze soup!

No it doesn’t work. We froze some by accident and it was horrible, the mayonnaise separates.

Agree with the soup idea. The French and Spanish sometime add aioli to bowls of soup (when served admittedly...) so in principal no reason not to add mayo along with some stock!

No it goes a bit urgh, but I'd probably eat it at least a couple of days after its best-before date if it looked ok - you might have longer than you think.

I wish I had coleslaw in the fridge right. I'd stroll over to the fridge, fork in hand, and eat mouthfuls while tanning myself on the fridge light.

No, won’t be nice defrosted. It’s nice in sandwiches so that could be a way of using a bit more of it.

I wouldn't freeze it but I do find mayo keeps a lot longer than the guidelines on the jar. If the veg didn't look brown and it smelt ok, I'd keep eating it.

It won’t, but it will keep for far beyond the best before date. Enjoy til fizzy 😉

That’s unanimous then! I will definitely keep using until after the date (unless it smells and has green mould). Thanks for all the replies and suggestions.

In my experience coleslaw lasts way over it's bbf date even once the tub has been opened. Just give it a good mix through before you use it each time
