To not know how long to roast chicken breasts

2 chicken breasts with skin on and parboiled potatoes in the fan assisted oven at 160C were perfectly golden brown in 1 1/4 hours.... does that sound right to you?

When DH does this he is slaving over it for 2 hours minimum. But I can't imagine using a temp lower than 160.

Chicken breasts? 30 mins max

Whole chicken approx 1.25hrs, depending on the size

MissMarks · 12/04/2020 23:50

Why on earth are you taking so long to make two chicken breasts? I have an aga- twenty mins. Whole chicken is done in about an hour and fifteen

MissMarks · 12/04/2020 23:51

We’re you roasting the potatoes??

DramaAlpaca · 12/04/2020 23:51

I do two chicken breasts (skinless) in a roasting tin with the lid on for 20 minutes at 180 degrees, then take the lid off and give them another 5 minutes.

I'd cook a whole medium sized chicken in 1 hour 15 minutes at 180 degrees.

Cabinfever10 · 12/04/2020 23:53

20 minutes per pound and 20minutes for the oven simple rule for chicken

Oakmaiden · 12/04/2020 23:54

Hmmm. I would personally have my oven a touch hotter for the potatoes. Put pots in for 20 mins (top shelf) Take them out to shake them. Put them back in with the chicken breasts on the middle shelf for 25 mins.

So 45 mins altogether. (Longer if the pots are t par boiled).

Crabbo · 12/04/2020 23:55

I do bone in thighs, so thicker than breast for 45-50 minutes at 190, sometimes 200. Potatoes the same. So yours sounds a bit too long, although I’d also do higher than 160 for chicken.

Bouledeneige · 12/04/2020 23:58

Are you serious? Chicken breasts? 20 - 25 minutes. 190 degrees. Any longer and they would have no juice left in them at all.

Bit of a dull way to eat chicken though. I butterfly and marinade in oil, lemon, paprika and garlic and griddle them. Or today I cut them up into thin slices and coated them in parmesan and flour and fried them. Or you can wrap them in bacon and roast them and make gravy. Or cut them up with chorizo, onions and red peppers and garlic and potatoes and spinach leaves.

PotteryLottery · 12/04/2020 23:59

Yes I was roasting the potatoes too.

Is it wrong to use as low as 160?

I thought roasts had to take hours. Like some kinda life rule.

This! I'd never roast a chicken breast.

Covert20 · 13/04/2020 00:05

Can you even make roast potatoes at 160?! 200 for roasties...

pastabest · 13/04/2020 00:07

I roast a whole chicken for about an hour and a half.

Roast potatoes take about 45mins if they have been par boiled, they need to go into a tray of hot oil.

I do both the chicken and the potatoes on about 190 but take the chicken out 20mins before eating to let it rest and turn the oven up to about 200 to finish the potatoes off.

The chicken takes all of 3 mins to put in the oven and 30 seconds to take out. Potatoes, however long it takes you to peel them (I start doing them after I've put the chicken in) 10 mins to par boil them 45 mins in the oven.

definitely no cheffing about for hours required.

PotteryLottery · 13/04/2020 00:07

Yes, the potatoes were perfectly golden and crispy.

Pastaforall · 13/04/2020 00:08

That’s ages! 5 mins in a frying pan skin down to crisp up then 25 minutes in the oven on 200. Potato’s maybe 45 mins give or take.

user1473878824 · 13/04/2020 00:09

Were they not very dry?!

Prisonbreak · 13/04/2020 00:14

I’d have put the spud in for 50mins approx then added chicken 25mins later approx. Never oven cooked a chicken breast for more than 30 mins

LochJessMonster · 13/04/2020 00:17

I literally chuck the meat and potatoes plus some onions and stuffing balls all in together at 200. Done in about 50mins.

P1nkHeartLovesCake · 13/04/2020 00:19

God your chicken must of been dry as anything. Breasts need 25-30 minutes max!

Also for roast chicken you need a whole chicken. Breasts are better marinated & cook, or used in fajitas etc

MrsBungle · 13/04/2020 00:21

I roast chicken breasts occasionally for ease. They take about 20 minutes on 180.

GADDay · 13/04/2020 00:24

You dont really roast a chicken breast...

Season & seal in a hot pan, until golden brown. Transfer to oven tray, then 17 minutes 180 degrees in the oven.

PotteryLottery · 13/04/2020 00:27

It wasn't dry, no complaints from DH or DD.

OP posts:
TerrorWig · 13/04/2020 01:15

Everything gets roasted at 180 here, but I whack it up to 220 for the final ten minutes when I’m doing the veg.

I don’t slave over it. A roast dinner is mostly an issue of timing. Prep everything and then time it well and you’re just shoving stuff in at the appropriate time. Then making gravy while the meat rests and the veg boils.
