It’s there, it pushes down, it looks like it’s meant to do something, however it attaches to nothing and doesn’t have any instructions that states it does anything 😣.

Are there any accessories that it could be used for maybe? Like add-on products?

Does it need clicking down to make the cot fold in on itself when putting away?

And/or does it click into place when you put it up?

It doesn’t click or anything, and doesn’t have anything to do with it folding

It's the mattress stopper. The mattress should butt against it. Looks kinda too low on your photo though.
