If you have cabbage with your roast dinners, how do you cook it?

I never cook cabbage with roast dinners but suddenly had a craving for it.

But I only remember my Nan's cabbage which was probably boiled and in gravy that had been made with lard...and dripping or whatever 1940s people made their spectacular gravy out of!

An old shoe would have tasted nice with my Nan's gravy on it.

How do you cook your cabbage please?

With a knob of butter and a tablespoon of water in a lidded pan on the hob, low heat. You need a pan with a lid that fits well.

Cook the shredded cabbage (any variety) lightly in a little salted water, drain well. Then put olive oil or butter or both into the pan the cabbage was cooked in, add finely chopped or crushed garlic and 50 grams of pancetta cubes.
Fry briskly until the pancetta browns a little, stir the cabbage back into the pan , stir fry until heated through. You can also put In a sprinkling of caraway seeds if you like. Season with black pepper and serve.
Great with any roast.

Steaming is definitely easier.

I boil it while hovering over the pan. No nipping to the bog. It needs to keep a bit of crunch. Then I use the water from it to go in the gravy concoction.

Boil it, but only til still crunchy. Drain. Add tablespoon of mint sauce, stir through.

As briefly as possible. Sweetheart cabbage is lovekuly and only takes about 3 minutes boiling. A minute or two longer for savoy cabbage, then a good knob of butter and loads of pepper.

Thanks for the thread, only because I have a red cabbage here which I want to braise, normally would use red wine or apple cider vinegar, but I only have rose wine and sarsons vinegar, would that work?

This very simple recipe is my favourite for cabbage:

  1. Take one cabbage, doesn't matter what variety.
  2. Throw it in the fucking bin where it belongs.

I boil cabbage with butter, then drain and add more butter and white pepper. Savoy cabbage is shredded and sauteed with bacon and some of the meat juices. Red cabbage is cooked with red or mulled wine, apples and red currant jelly.

Doesn't anyone roast vegetables? Brussels sprouts and cabbage are a revelation when roasted. Regular green cabbage, chopped coarsely, packed into a flat roasting pan, very lightly drizzled with olive oil, sprinkled with salt. I don't even bother tossing. Roast uncovered at 365 F for an hour or so, stirring and turning the pile of cabbage over every twenty minutes. Roasting reduces and turns it into a delicious golden pile of vegetable that can accompany any strong meat dish like a roast. It takes very little attention and only one pan to wash.

Green cabbage is nice steamed. White and red cabbage is best raw or pickled like in kimchi

My dad does a cracking bit of stir fried cabbage and leek with pancetta and black pepper.
I was meant to be going to my mum and dads for an Easter roast this afternoon. this has made me realise how much I miss normal stuff with them!

Cabbage Steaks.

Slice cabbage. Place on foil doubled over. Smear with garlic butter (as much as you want) both sides and also salt and pepper both sides. Make a tightly sealed foil pack. Place in a grill pan or on a BBQ and cook about 15 minutes each side.

When you open the packages the cabbage should be blackened on the edges and soft and really slurpy and lovely.

My nan used to boil it with plenty of salt and then she'd tell me to drink the "green water" to make my skin healthy! It was delicious.

Whenever I cook cabbage to go alongside roast dinners it’s typically braised red cabbage - specifically the microwaveable kind from Sainsbury’s or Waitrose.
