I have been looking online all morning and there are so many variations! I'd like to get going ASAP so that potatoes can cool down before our BBQ later on.

Just to be clear, we have frozen burgers and I found a BBQ tray the we didn't use last year. I will not be leaving the house!

I can give you the Pizza Hut recipe from my old student days. 😁

For every cup of mayo, add one table spoon white sugar, two table spoons of white wine vinegar, couple of finely chopped spring onions or half an onion of your choice, teaspoon Dijon mustard, teaspoon parsley and mint. Salt and pepper.

Careful with the German potato salad recipe. You should cook the potatoes in the skin first then peel, slice into rounds and soak in a beef broth and and vinegar mix first with minced onion. Then a small amount of the oil afterwards. It's usually served warm here.

Nrtft sorry. But baby potatoes roasted. Then any kind of onion, I prefer red but will use whatever I have.
Will also use any kind of potato so long as its roasted.

Mayo mixed with lime juice, add cumin and if liked red pepper flakes.
Have been known to put celery in or spinach, capers, garlic, cooked or raw, rosemary, crumbled cooked bacon.
Actually looking at that. I put in anything as long as the spuds are roasted.

We make it with mayo, vinaigrette, hard boiled eggs and spring onion.

PureedSocksAndPants · 07/04/2020 18:57

I keep seeing hard boiled eggs mentioned. Never thought of that but definitely going to be giving it a try!

If anyone is going to make anything using new potatoes, please use Jersey Royals if you can get them, The islands' farmers are facing economic destruction because of Covid. They need people to buy their potatoes this year, or else there won't be a next year. Or any year after that. This really is make or break - 2020 could be the last season in over 150 years of a unique potato.

I know Royals are expensive right now (because they are labour-intensive to grow the early ones for sale) but they are such an important part of the island economy. We're pretty fucked right now, and we don't get any money from the UK, or any of the business bail-outs the UK gets. We could be plunged right back to 1930s rates of economic depression in the island in the next 4 weeks - and if that happens we will never recover. And I don't want to think what that means for our young people and OAPs.

So please, if you see Jersey Royal potatoes for sale, please buy them, You'll be doing more good than you know. Thank you. xx

New potatoes boiled and mashed slightly, salt, pepper, mayo, mustard, spring onions and smashed up egg and mixed together.

showmewhatyougot · 08/04/2020 08:48

Oh I'm forgot the gherkins! Have to be in tiny bits.

Lumierecandle · 08/04/2020 08:54
  • Red potatoes cubed and boiled until semi soft (but still firm enough that they won’t fall apart
  • sauce: mayonnaise and approx six teaspoons of horseradish cream
  • fried streaky bacon bits
  • 12 hard boiled eggs cut up into chunks
  • small jar of capers
  • 250 grams of danish feta
GregoryGrainneog · 08/04/2020 09:30

Half mayo, half natural yoghurt. I prefer spring onions but if I don't have them, I finely chop onion and put a little vinegar on them then leave them for about half an hour before adding. It makes them taste less harsh. I also chop gherkins really finely and add.

Never wanted potato salad more in my life. All these ingredients are essential purchases, right?

Iknewyouwerewaitingforme · 10/04/2020 09:41

Agree alphasox German Potato salad rocks. Thing is I love eating it but not made it. Giving it a go today- love this thread. May you all enjoy your potato salads in the sun this weekend.

ButterbuttSquash · 10/04/2020 09:44

What @DressesWithPocketsRockMyWorld does, but I add wholegrain mustard or Dijon to the mayo.

Funkytowns · 10/04/2020 09:48

It’s got to be made with salad cream! Not mayo or vinaigrette.

Clickncollect · 14/04/2020 21:41

The potato salad I make is the same recipe our German neighbour taught my mum when I was growing up - mayonnaise, vinegar, potatoes (no skin), egg, white onion, chopped gherkins and chopped hot dogs. Bloody delicious and I made it at the weekend!

Here’s a pic!
