I have been looking online all morning and there are so many variations! I'd like to get going ASAP so that potatoes can cool down before our BBQ later on.

Just to be clear, we have frozen burgers and I found a BBQ tray the we didn't use last year. I will not be leaving the house!

A big dollop of sour cream
Black pepper

Skin on potatoes cooked. Cooled and mixed with mayo, spring onions and plenty of s&p. Topped with finely chopped eggs and the green from spring onions. Sometimes paprika.

New potatoes chopped (skin on)
Spring onion or shallot marinated in white wine vinegar for an hour
Half mayo half natural yoghurt
Wholegrain mustard, salt and pepper to taste

I don't like mayonnaise, but I absolutely love love LOVE German potato salad with stock and vinegar! It's much lighter and goes so well with sausages and beer on a hot day. I spent a summer in Freiburg as a student and lived on the stuff.

This is the best recipe I've found that comes closest to what I loved.

New potatoes, bacon crispy or chorizo for a twist. Sour cream and chive. Spring onions but I’m liking the idea of red onion.

Banned in our house due to dh traumatic potato salad memories from childhood his German granny used to make all the time he was forced to eat she was a terrible cook dh scarred for life!

Red potatoes with skins on
Chopped cooked bacon or pancetta pieces
Celery
Sour cream or Greek yogurt
Grated cheddar
Black pepper, dill, oregano

Made this last week, it's great. I don't like mayonnaise.

Some really interesting ideas here!

I ended up doing 1:2 mayo and crème fraiche with chopped capers, parsley, mint, lemon zest and blanched spinach and red onions.

It was delicious, but I did overcook the potatoes Blush

Skin on new potatoes boiled with some garlic that is chucked away with the water.

Chopped spring onions

Always steam the potatoes rather than boil them. They will have a drier texture and So soak up more of whatever dressing you use.

Interesting that German recipes for potato salad here have a vinaigrette dressing. I think it must be regional as my own Oma’s version was made with mayo. Really good mayo is not easy to find in the UK, the closest I’ve found to what was used is the Polish brand Winiary.

Mayonnaise
Add one or two raw egg yolks
Very finely chopped onion, gherkin and green apple. (Granny Smith’s)
LOTS of parsley
Salt & pepper.

The right kind of potatoes is vital: new potatoes or a good waxy kind boiled in their skins. These are peeled and sliced into the mayo mixture while still hot. Cover and leave for a couple of hours at least before serving if you can. This is the difficult part

Boil the potatoes, slightly over-boiled if anything. Lightly crushed if using skin-on newbies. Add a little finely chopped onion (that has been soaked in lightly salted water while the potatoes were cooking, then drained and rinsed). Half sour cream/half mayonnaise to dress the warm potatoes, with a really good squeeze of lemon.

Add lots of chopped chives with the peeled potatoes.

I like dill instead of chives with skin-on potatoes, in which case I often add some capers too.

I think what we think of and call German potato salad is actually Schwäbisch style, from Stuttgart/Baden Wurtemburg areas, Black Forest and the south. I think northern and central Germany do mayonnaise ones.

Dh granny was German and from Stuttgart hence the hideous potato salads of his childhood - all makes sense now

I love vinegar and broth in mine. So much so that I've just made one. I added some hardboiled eggs too, just because. Usually I use loads of parsley and dill, but only had a bit of parsley this time. Still, it does taste nice.
