I have been looking online all morning and there are so many variations! I'd like to get going ASAP so that potatoes can cool down before our BBQ later on.

Just to be clear, we have frozen burgers and I found a BBQ tray the we didn't use last year. I will not be leaving the house!

New potatos boiled (not too much) with the skins on. Creme fraiche with nutmeg and a bit of truffle oil (if you have it) fresh sage, rosemary and mint (if you have them) salt, pepper and red onion. So good!

I put lemon in mine! New pots in skins, leave to cool a little, crush not mash, lots of fresh lemon juice, salt, pepper and I mix mayo and salad cream bc you get a little tartness from the salad cream.

Love the idea of gherkins, not done that before!

My mother in law does a “cowboy salad”. Potatoes, mayo, crushed garlic, chopped hard boiled eggs, chopped bacon and spring onion...it’s addictive!

New potatoes, soured cream, dill, salt & pepper = nice Scandi style version that’s goes beautifully with fish.

For burgers, though, American-style -
red skinned potatoes, 2/3 mayo 1/3 salad cream, chives, finely diced red onion, mashed up hard boiled eggs, salt & pepper.

I’m making a roast today, but now I really want a bbq!

Half new potatoes with skins on or chop normal potatoes into bite size chunks and cook. Allow to cool. Then mix with mayo and chopped chives. Simple and always very tasty.

New pots on skins. Vegan mayo. Chives or spring onions. Squeeze of lemon. Tsp Dijon mustard. Chopped mint. Sea salt and cracked black pepper

I always peel my potatoes because - I just do. Cook diced potatoes. Dress with 1 tsp grainy mustard/1tbs mayo thinned with more olive oil and vinegar. Mix together with salad onion, diced red apple, celery, pecans or some other nut roughly chopped. I can also change the potato with cabbage for a coleslaw and will use ACV instead.

It will be about 30 degrees for Easter Sunday. You all have me thinking about planning a menu.

New potatoes chopped and boiled with skin left on.
Mayonnaise.
English mustard.
Ground black pepper.
Fresh snipped chives (we have them in the garden). If not, then use the green bit of spring onions instead.

New potatoes skin on, chop while warm and add cooked spring onion and crispy bacon, I've that's cool add mayo, sour cream (or natural/Greek yoghurt/creme fraiche), a little bit of mustard, salt and pepper. The sour cream or yoghurt make it less gloopy and sickly

Potatoes, onion, chopped gherkins (fine), mixed with equal parts mayo and salad cream with a dollop of mustard stirred in.

I actually quite like big floury potatoes chopped up instead of baby potatoes but I am a heathen Grin

Base
Chopped new potatoes
Mayonnaise
Salt and pepper

Then it depending on what I am serving it with, I add one of:
Spring onion
Chives
Dill
Tarragon and mustard

I sometimes garnish it with finely chopped bacon pieces or crispy deep fried onion

If you don't fancy mayo, new potatoes, chopped bacon, chopped caramelised onions and chives served warm in a french dressing is a tasty alternative.

Potatoes with skins on, cut to smallish pieces or in half if they're New Potato size.

Small pieces of red onion, spring onion greens (got a couple of spring onions that have been living in the window box for around 3 years now, as I use them for greens), Dill, baby Mint leaves from the same windowbox, chopped gherkin, capers if I have them, mayonnaise, crème fraiche/yoghurt, pepper and sea salt.

Kiwi version here:

Skin on new potatoes
Hard boiled eggs
Mint
Spring onions,
Shit load of home made condensed milk salad dressing (condensed milk, pinch of mustard powder, white vinegar)

My parents is the absolute shizz. About 2 tablespoons of vinegar, one table spoon of sugar (mixed together until sugar dissolves) mayo and chives. So moreish!!

pealed and sliced boiled potatoes, cool,
mix some mayo with salt and pepper and a few Tbls white vinegar, you want it a little tart to taste, i make about a half jar at a time
finely dice red onion, gherkins, capers and dill mix it all together and season as needed, eat now or chill and eat or chill over night and hide away and eat it all yourself
