We are stuck in such a recipe rut and what better time to get out of it. DP is also the plainest eater ever but has promised to try some new things. The below is all the meat I currently have in my freezer, would love to see some recipe ideas that aren’t bolognaise, fajitas or curry! And preferably ingredients I’ll be able to pick up in Sainsbury’s or Waitrose tomorrow.

Chicken
Mini meatballs
Beef burgers
Lamb burgers
Mince

Oh and ideally no nuts or dairy or easy substitutes for those if it does include them.

Honey Garlic Chicken
With Aromatc Rice. Serves 4.
(10 min prep, 40 mins oven)

(You can leave out the butter if you want)

INGREDIENTS

100 ml honey

4 tbsp. soy sauce

1 tbsp. mixed herbs

5 cloves garlic, minced

salt and pepper

800g skin-on, bone-in chicken thighs

200g rice

½ chicken stock cube

½ spring onion, chopped

1 tsp lemon zest

1 tbsp. butter

How To:

  1. Preheat the oven to 200ºC (fan 180℃/gas mark 6).
  1. Add the honey, 4 tablespoons of the soy sauce, mixed herbs and minced garlic to a bowl.

Season with salt and pepper and whisk together to combine.

Pour into an oven dish and set aside.

  1. Remove the skin from the chicken and keep it in an airtight container in the fridge.

You can use this to make the crispy chicken skin for the Chicken and Avocado Salad (tomorrow’s lunch).

Remove and discard any excess fat from the meat and then place the thighs into the honey garlic sauce.

Roast in the oven for 40 minutes.

  1. With 15 minutes to go, make the sticky rice. Boil the rice in plenty of water seasoned with half a chicken stock cube.

Once cooked, drain and return to the pot.

Add the spring onion, lemon zest and butter, then vigorously mix until sticky.

  1. Serve the rice with the sauce from the oven dish and one chicken thigh each.

Mince ~ moussaka, cottage pie, mince and dumplings.
Mini meatballs ~ poach in stock and add to noodle soup or stir fried vegetables & noodles.
Chicken ~ roast it if it’s a whole chicken and use the leftovers for chicken pie, risotto, etc etc.

What type of mince? Lamb, pork, beef? Likewise the meatballs? What form is the chicken in?

I make lots of tagines, so I’d probably do that with the chicken, or the meatballs if they’re lamb.
Also:
Chicken and chorizo paella
Sweet and sour chicken
Chicken chow mien
Stir fry
Chicken risotto

Chicken seasoned fried and cut up stirred into pasta with cream cheese,wholegrain mustard mustard and spinach, or with cream, gorgonzola, fennel and broccoli.....yum!

Look up the receipe for chicken marsala (not the curry!). It's like a chicken casserole made with marsala wine (recipes offer alternative if you can't get it). Not tried it yet but it looks lovely!

Sorry should have said beef mince, beef burgers and beef meatballs, chicken is 4 breasts

Oohh and we’ve got loads of red wine we won’t drink if anyone has any ideas for using it up in recipes

Chicken. Cut into breast to make it half as thick. Season, bung on bed on thinly sliced onions, garlic, leeks (whatever you've got that's onionlike) and random green veg. Tin of tomatoes or slightly sad looking cherry tomatoes cut in half. Squirt barbeque sauce on top. Few sprigs of herbs. Stir and bake. Eat with boiled potato, melt cheese on top if you want.

Chop a chicken breast into small chunks. Quickly brown in pan. Chuck in lumps of spring onion until they start to soften. Add soy, marsala, a bit of water and keep moving around until it's coated. Serve on rice.

This is my favourite recipe for super tender chicken breast.
It's literally fail proof.
Cut chicken breast on thinner slices, around 2-3 inches long.
In the bowl mix 1 cup of plain white yoghurt ( I'm usually using Greek- as it's thicker), 1 tsp of dried marjoram, 2 crushed garlic cloves, 1/2 tsp of salt.
Put the sliced chicken breast in a sealable food container- pour the mixture over, close it and give it a good shake.
Put it to the fringe and let it marinate for 1-2 days- occasionally shake.
When ready- heat the frying pan and coat well each piece in breadcrumbs and fry them on medium heat.
It's delicious with potatoes of any form.;)
