I know this is not AIBU..but need a quick answer..I am making pastry..using up left over flour and veg for a quiche..but the scales are broken..No biggie I know.
I can guess fat measurements but flour? Is one oz a heaped tablespoon. Does it matter? My friend just throws it together.Thanks in advance

Maybe look online for an American recipe where they use cups.

I think you can safely guess one tablespoon is 1oz. You want half fat to flour. Put it is a plastic bag one in each hand and guestimate,

It’s about 1fat to 2 flour with a bit of iced water on top. Start with using not quite so much fat and you can add more if it isn’t working properly.

Mine is gf, df so always a work in progress but it’s not difficult.

You can use more fat to flour if you want a richer 'shorter' pastry. But i wouldn't use less.
So you can err on the side of slightly more fat, if that's useful.

1 Oz is a rounded tablespoon, I believe.

Thankyou everyone..it's made and will be eaten! I took all your advice and mixed it up..It looks ok, smells ok lets see how it cooks..what can go wrong!! (Would you believe both my DSs are Royal Navy trained chefs but can't get hold of one and the other is a festering sleepy mess in his bed upstairs..)
