I'm using up some over ripe bananas and have a spice banana loaf in t'oven. I'll post a pic when it's out of the tin. As long as it doesn't look like the dog produced it.

Anyone else got delicious looking pics of food they've made? Not normally something I'm into but I think some of us are probably cooking/baking more than usual.

I cook from scratch a lot but haven't made a cake for a while.

Go on then, show me your grub Wink

I am resuming bread making tomorrow. Found a good supply of strong flour.
I remember in the 70s the bread shortages and making bread on large scale on Sunday evenings. My dad and I had it down to a t. I would do the first mix and he would do the second kneed and bake it. We would make 6 loaves for the week and freeze it. We carried on until I left for Uni. He could never get my sisters interested.
I have made flapjack for my 6ft 2 DS15 who eats enough for 3. I am going to introduce him to bread making !

These are my Death by Chocolate Brownies. They're made by melting 3 cups of chocolate chips in melted butter, sugar and a bit of water, then adding flour and two eggs. They are so moist I have to put them in the freezer for an hour so that they'll cut cleanly. The recipe is really simple and I can have them in the over in 20 minutes.

I learned how to easily line the pan with aluminum foil from Rachael Ray, who hosts a popular cooking show in the US.

There is no yeast or bread flour anywhere so made beer bread.

Flour was in short supply here when the panic buying started but restocked quickly. Sugar has been harder to get for some reason. I do a lot of baking so had good supplies of everything in before the virus hit.

Gluten free banana bread here - no picture as it's all gone but was lovely, with plum jam made last summer from foraged tiny plums.
Gluten free Yorkshire puddings with Sunday roast as well which were enormous!
DD is coeliac and baking can still be a bit hit and miss but today was a good day!

willdoitinaminute I remember the bread strikes in the 70s too. I used to make soda bread. I feel ancient writing that - I was about 7!

Made my 2nd ever batch of bread, this time 2 mini loaves. They were heavenly. We're very low on butter so I made a pea and bacon soup for lunch and the bread was perfect for dipping.
I made some biscuits later on as we have ran out.
I'm definitely getting better at baking than I was pre quarantine.

I made flatbreads last night using self raising flour, yogurt & garlic olive oil to go with out curry. I was pleasantly surprised & will use the same base again to make pizzas with the kids!

I meant peanut butter instead of the almonds, but reduce butter to allow for level of oil in the peanuts if that makes sense? Your question makes sense, but for the flourless brownies it won't work.

You need the structure from the almonds in place of flour, with peanut butter too wet as a substitute. It doesn't have a high enough fat content compared to butter (about 45% for peanut butter v about 80% for butter) to compensate, and trying to make the brownies without the ground nuts won't leave you with anything that will cut into neat squares.

Here's something to consider www.kingarthurflour.com/recipes/flourless-peanut-butter-chocolate-chip-cookies-recipe I've not made it but it could be worth a go.

Something easy and good that children might enjoy is this: place small pretzel rounds on a baking tray and a Rolo on top of each. Place the tray in an oven at 150 for three minutes, just long enough for the chocolate to soften.

Remove the tray and press a pecan half into each Rolo, squashing it a bit. If the Rolos are still a bit firm the tray can go back in the oven but for no more than 30 to 60 seconds.

Let them cool a little, and store in a tin. Much more than the sum of their parts, very tasty. Gluten-free pretzel rounds work a treat with this as well.
