I'm using up some over ripe bananas and have a spice banana loaf in t'oven. I'll post a pic when it's out of the tin. As long as it doesn't look like the dog produced it.

Anyone else got delicious looking pics of food they've made? Not normally something I'm into but I think some of us are probably cooking/baking more than usual.

I cook from scratch a lot but haven't made a cake for a while.

Go on then, show me your grub Wink

Hornazo for Lunes de Aguas in Spain. It's a sort of pie with pork loin, egg and chorizo.

Looks lovely Novia

Cinnamon rolls, blueberry scones and homemade falafel and fennel flatbread. I've also made an awful lot of bread (got a friendly sourdough starter living in the fridge), and have been making seitan in various forms but seitan isn't what you might call photogenic Grin

Gorgeous food pics. The felafel and fennel flatbread just looks lush. I would love the recipe.

whydobirds · 20/04/2020 23:12

Thanks @RosesandIris. I'm a bit crap at measuring stuff but the falafel is basically a can of chickpeas mullered in the food processor till they're chopped up but not total mush, a little salt, crushed clove of garlic, herbs and a glug of olive oil. I've seen recipes with egg but I don't eat egg and tbh it's unnecessary. I think I may have added a little water to those to get them ballable, then ball, bake at 200 until golden. Sorry about lack of quantities. I taste seasoning before cooking and the dough needs to be not dry but not stupid sticky. So you can ball it but so it doesn't turn into desiccated lumps of sad in the oven. You can use the chickpea water to make a meringue substitute too (I made a lemon meringue cake with mine).

Flatbread is plain flour, glug of olive oil, salt to taste (I test before cooking) and a shake of fennel seeds. Add enough water to make a soft dough then knead til it's nice and stretchy. Rest for a few mins then roll out til it's thin enough you can see your hand through it. Cook on a pre heated dry frying pan one at a time and turn over when it starts to bubble up. Dont overcook or they go hard. Can also use bread flour for those, that makes them a little softer, but standard plain is fine.

I'm really rubbish though. Can never be bothered to measure anything properly so it's "glug of this" or "half a small mug of that"...

whydobirds · 20/04/2020 23:14

Oh and the tomato.sauce is a few cherry tomatoes liquidised with a chilli, and a generous dollop of good old Heinz Tomato Ketchup...

SpillTheTeaa · 20/04/2020 23:30

I've come to the cinclusion that I am the worst baker ever. I followed a Mary Berry flapjack recipie to the letter - it welded to the baking tin and I had to throw the whole thing in the bin. Flapjacks for ffs! Even primary school children can make those!Grin

WickedGoodDoge · 21/04/2020 20:30

whydobirds Those look great. I would love some blueberry scones right now. Unfortunately, I’m pretty sure I’m the only one who would eat them.

I made these last weekend- they are like a mix of a muffin and doughnut and OMG they are so good. (and almost all eaten by the time I took a photo) I made half with raspberry jam in the middle and half with salted caramel (preferred the jam ones).
