Hashtags can only be trending for a limited period of time, so if people want to keep a topic trending, they have to periodically change the hashtag. One way of doing this is to alter the spelling slightly.

I think it's to do with growth in tweet numbers rather than actual tweet numbers? So if the number of #coronavirus tweets levels off, even if it's still a large number, it will stop appearing in trending topics. Whereas if people start using #coronvirus instead, that term will show a rapidly rising number of tweets and therefore appear in trending topics.
