WTF happened to my honey?!?!

AIBU to still eat it?!

It started out very pale cream colour, creamed, thick and the top has suddenly transformed into dark runny honey?!?!

I thought only runny went crystallised, not the other way round..?

Has it spoiled?

I thought honey lasted practically forever

I don't know but my runny honey has recently crystallised, so I feel your irritation!

It's totally fine - I don't know why the solid honey sometimes goes runny (maybe temperature?), but it's entirely edible

It's probably a blend that's separated. Stand it in hot water, give it a stir, it's fine!

Honey can't go bad I don't think, and it's just crystallised is all. Can go liquid on top then due to separation. Nothing wrong, safe to eat! You can heat the honey in warm water to break down the crystals if you want

Did you buy this as "creamed" honey?
It just says organic honey on the jar but it was thick and pale when I bought it, not runny.

My partner keeps bees and honey does do this sometimes - when it gets warm it gets more runny so if you want to de-crystalise some set honey you stick the jar in some warm water as a previous poster suggested - try putting yours in the fridge and see if it resets!

Take the lid off and put it in the microwave for a minute, it will return to normal.

Perhaps there is some misunderstanding here on my part.
I took the original comment to mean a doctored honey, a honey blended with sugar syrup or similar.

Honey will last forever! You’ll be fine. Mine crystallises sometimes I just warm it up a bit to loosen it.

it's only crystalised.
that happens with honey if it's not heated.
the big honey companies usually buy big batches from anywhere, heat it all up and fill it for sale. proper honey (apart from tree honey) cystalises. it's natural and not a bad thing.

and actually getting churned honey from a beekeeper is the best thing ever.

you can still eat it and it stays better on your toast if it's more firm

Yeah supermarket honey isn't great.. a mixture of honeys from all over the world. Lots of air miles, sometimes treated to keep it looking good on the shelf, and more likely to contain honey bee diseases (why you should never feed bees honey).

Always buy local honey if you can. Coming from a highly-biased beekeeper of course 😁

Agree with pp: heat up in a pan of warm water and it should all liquefy. It's fine to eat.

Chruned honey (aka creamed honey) is the pale coloured honey you can buy that has a texture like butter. It is made by "seeding" honey with very small sugar crystals and churning it until it becomes a smooth and creamy texture.

If you buy honey from a beekeeper or local farm shop the honey you're getting will be from local bees, often from a single apiary. It is literally just spun out of the honeycombs and bottled.

Mixed/blended honey is made from mixing together honey from many different apiaries across the world and often heat treating to keep it looking runny. Syrup is sometimes added as well. It is often (not always!) cheaper though.

Sorry- only buy single-location produced honey! (Easiest to get are Greek or Scottish). Honey is very expensive nowadays, but if you like it, it's worth it.

It's fine most honey will crystallise at some point, expecially if it's been opened. I got some from a honey farm a while ago and was more intreguied that it hasn't crystallised yet. Normally I have to remelt my honey time n again. But this one came in a little bear shaped bottle with one of those "splurty" lids that you have on the flat lucazade juice. It's been open three month and I occasionally use it and it's still not crystallised. It's safe and hasn't spoiled just remelt in a bowl of warm/hottish water or in microwave as long as it's a microwave safe jar.
