WTF happened to my honey?!?!

AIBU to still eat it?!

It started out very pale cream colour, creamed, thick and the top has suddenly transformed into dark runny honey?!?!

I thought only runny went crystallised, not the other way round..?

Has it spoiled?

I thought honey lasted practically forever

Not all raw honey crystallises (or it crystallises slowly). We have honey left from last year that is still runny but it’s mainly blackberry. It does depend on the flowers.

OP I suspect you have creamed honey which has partially liquified. Creamed honey is made by beating liquid honey and seeding it with solid honey. Give it a really good stir.

Most supermarket honeys are not great. You can check with your local beekeepers association as some members will sell spare honey. The lousy spring has set everyone back so there isn’t a great deal of honey ready yet where I am.
