I LOVE meal prepping, Sunday afternoons in the kitchen is one of my favourite things to do. AIBU to wonder if anyone else is as sad as me .......

Savoury slice with tomatoes and smashed avocado

Protein pancakes and Greek yoghurt
Snack box
Fruit
Veggies
Roasted chick pea
With hummus or cottage cheese
Lunch
Vietnamese noodle salad

I meal prep but for the freezer , there’s no way I could eat the same meal a few times a week.

Question about the avocado though - do you use something to stop it going black ? I’ve used lime juice before but even that lasts just a day

How did you make the vietemmese salad looks amazing?!

I have just roasted a whole chicken with piri seasoning and made 4 salads for me and DP lunches the next two days Grin

With lemon it's fine, the avocado. It's only the same twice then we have a different supper every night. Worth it for being sorted for the week !!

I tend to cook bigger batches and freeze as I go.
We are experimenting with being veggie this month so different to my usual but we hate having an aubergine bake ... I will do extra and freeze in foil trays
From previous meals on days off I have in my freezer :-

Vegetarian lasagne
Vegan 3 bean chilli (which was easy as a slow cooker recipe Defno doing that again )
Vegetarian curry
Ratatouille
And from pre veggie days :/
Chicken casserole
Slimming world chicken casserole
Cottage pie
Chilli con carne

I try scratch cook majority of meals especially now I have a 1 year old so we can all eat together I do 1 -2 freezable meal that perhaps require a little more preparation And
1-2 slow cooker options which you can just throw together but again all raw ingredients so can control sugar and salt
And then I always have 1-2 of my previous frozen dinners and then the option of quick food like omelette / sausage jacket potato ( frozen and microwaved types )

This is new for me as just of mat leave but trying to be as organised as possible

Containers are a mix of 'meal prep boxes' from amazon/Kmart and recycled old takeaway containers.
Everything is sealed so fresh all week, don't dress or season until ready to eat.

Recipes are a mixture, this week I used

Pinterest
The dr's kitchen
Donna hay

Vietnamese salad is
Poached chicken
Vermicelli rice noodles
Chinese cabbage
Chilli
Pepper
Carrot
Spring onion
Peanuts
Cucumber
Mixed sprouts
Mint
Coriander
Lime

Dressing
Rice wine vinegar
Sesame oil
Lime juice
Fish sauce
Soy sauce
Ginger

Keep seperate and mix when ready to eat.

This is amazing! I am totally in awe that you do this.

Does anyone meal prep for family of 5? If so, do you have any helpful tips? I’ve tried cooking extra lasagnes etc for the freezer but by the time I’ve done all of the chopping etc, it can take hours!

I’ll watch this thread for inspiration and in the meantime will start my own planning. How can I have gone for decades without figuring this out? Still, better late than never! Smile

The thing is it does take time ... unfortunately. But worth it. Buy frozen chopped onions or invest in a food processor. Helps when doing bulk chopping or outsource some of the graft to your family ?!
I set myself a couple of hours on a Sunday. Pour a glass of wine, watch a fave movie or listen to music and get cracking !!!

I watch a few youtubers who meal prep for the week. Spend all Sunday cooking then freeze. What I can't understand though is that they are both SAHMs with school aged children, so it seems to me to be such a waste of a Sunday. I like the idea of meal prepping, but cba and wouldn't leave food in the fridge for more than 2 days max. I wouldn't eat a salad the next day, surely it goes limp?

I like the idea of this and the finished pictures always look impressive!

But in reality I don't want to eat the same thing two days in a row and I don't find it keeps as well as people always say it does. (I don't mean it goes bad, but it's not as fresh. That doesn't bother some people but it does bother me.)

I prefer to prep mine the night before, so one day at a time. I do it while I'm cooking dinner so it's not a massive hassle.

Nothing goes limp if you don't dress it prior. We make a few options so you don't get bored. We'll alternate this noodle salad with a wrap!

If only I had taken a pic of my meal prepping for Chinese New Year, it took me three days to shop, prep and cook. On the cooking day I had Pyrex bowls stacked up with saucers inbetween, they did look lovely.
