Will universal credit be paid early due to Monday 5 august being a Scottish bank holiday??

No it shouldn't as its only a Scottish holiday (payment are dealt with in northern Ireland) so you should be paid as normal but if you check your payment page on your uc account it will confirm that

Only if you're in scotland, if you look on direct Gov they have a list of payment dates. I've been paid two days early which is weird, but think it's because I've renewed my tax credits. They're good at not sending letters out first!
