Just been reading the other thread (what are you having for dinner) and noticed a lot of comments saying they don’t have time to cook certain things through the week and save it for a weekend. What are some of your favourite easy/simple things to make? I love cooking but do dread it sometimes after a long day at work

Egg fried rice with peas, sweetcorn and chicken. Or anything else!

Steak, with ready prepared stuffed mushrooms or peppers.

Chicken/steak/mixed fish fajitas.

If I make lasagne/bolognese then I make it extra saucy, scoop out most of the mince to use for the first meal and then save the left over gravy and skimpy amount of mince and put it into one of those pour and store bags in the freezer

When you need a quick meal you just have to par boil (about two thirds done) some pasta tubes/spirals and when it is drained stir through the defrosted gravy, add wodges of mozzarella and grated cheese on top and into the oven with it for half an hour....BEEFARONI! I have even put those cheesey garlic bread slices on top for the last ten minutes.

If I’m in a hurry it would be either something very slow put in much earlier and simmering away or a quick meal.

Quick suppers for us are things like

  • pasta with tomato, chilli or carbonara sauce.
  • stir fry with noodles or rice
  • omelette
  • steak and salad
  • salmon and something
  • crab out of the freezer with crusty bread and salad.
  • risotto
  • ploughman’s supper

Tomato sauce, can be used for pizza one day, pasta next day.
Pasta with white sauce, tuna and sweetcorn. Leftovers as cold salad for the next day.
I love using slow cooker(chili con care, goulash, curry etc.), don't have to spend much time when I get home after work
Salad quickly thrown together with cold grilled chicken.

Microwave jacket potatoes.
Pasta with sauce (tomato, pesto, cheese, or tuna and sweetcorn)
Cheese on toast with soup.
Stir fry.
Couscous with frozen pre-roasted veggies and cheese. You can add meat/fish to this too if you want.
Beans on toast.
Sometimes it's freezer food too!

Mushrooms, spinach, cream cheese, toasted pine nuts with tagliatelle.

Dry fry mushrooms with a splash of Lea and Perrin, add spinach, melt in cream cheese (can be with garlic and herbs, etc.). Bit of fresh pepper and serve on tagliatelle with a sprinkle of pine nuts.

Chicken noodle soup.

Boil up some chicken stock.
Add what you’ve got from thinly sliced carrot, mangetout, spring onion, bean sprouts, chillis.
Add small pieces of cooked chicken.
Add noodles and cook for 5 minutes. Serve!

Minute steak, salad and spuds.
Shop bought melting fish cake and broccoli.
Salmon fillet with garlic and lemon spaghetti.
Roast chicken, salad and garlic bread.
Various joints bunged in the slow cooker with whatever goes (lamb with tzatziki and pitta, pork with apple sauce and buns, all with veggies of some description), leftovers the next day stir fried with noodles, a packet of shop bought stir fry veg, 5 spice and soy.
Chicken fajitas.
Jacket potato with coronation chicken or prawns in 70s sauce and salad.

We mainly eats lots of stews and casseroles when I can't be arsed though.

DH and I had one of those markses stir fry meal deals for dinner. They're about as authentic as supermarket "carbonara" but fresh and tasty without all the bloody chopping.

Baked potatoes
Gnocchi with bought tomato sauce and mozzarella
Stir fry with frozen, pre chopped veg
Salmon with rice and broccoli
Tikka chicken breast with microwave rice

To be honest my laziest meals are taking something out of the freezer like bolognese, lasagne, Shepard's pie, chilli etc.

Pasta Primavera (any selection of green vegetables)

Pasta with parmesan and butter, or a creamier sauce with herby Boursin and a splash of wine.

Pasta with a fish sauce such as tuna or sardine.

Broth with gyoza or noodles and vegetables if you've got them.

Ready made gnocchi with a quick tomato sauce.

A big oven dish with sliced shallots, maybe carrot shaved with a peeler, mushrooms, spinach if we have some, topped with quick cooking protein ( fish fillets are quickest, also do meatballs and chops in a similar way.) Drop of boiling water in the dish to stop veggies catching too much. Bake in medium oven, done by the time any rice or salad bits might be prepared and the table is ready.

Other than that leftovers are quickest!

Today I made salmon - marinated for twenty mins in 3tbsp maple syrup, 1 tbsp Mirin and 2tbsp soy sauce.
Popped it in the fridge for 20 mins and then pan fried it, pour the marinade over while cooking, it was so nice. Had it with rice, broccoli and soy beans.
I thought it would be a faff because of the marinade time but I emptied the dishwasher, took the bins out and then made the rice and veggies.
