It's Mexican Monday 😂, so we've had loaded nachos and a salad 🙂

leftover chicken with roasted carrot, parsnip, red onion, courgette, swede, sweet potato. All bunged in the oven.

Mushroom, edamame and spinach ramen tonight with an egg

Tomorrow going all fancy and having Sole meunière with crispy capers, new potatoes, a shaved fennel and courgette salad and probably spinach as a side.

Wednesday going to have a massive steak with sweet potato wedges, roasted baby vine tomatoes, roasted herby field mushroom and a rocket and watercress salad with Parmesan shavings.

Thursday out

Friday pea and paneer curry with paratha and rice and an Indian salad and will do an some popodums and chutney to snack on as well.

Mushroom stroganoff with wild rice.

Coq au vin pie - it’s a Hello Fresh. Have made the filling and it’s delicious.

Homemade pizza tonight :)

Tandoori king prawns, chicken and salmon.

Hunters chicken with Mediterranean veg rice here tonight. One of our favourites :)

We had stir fried veg and noodles with a Japanese-y dressing, I had tempeh with mine and DH and DS had prawns with theirs.
We had palak paneer and rice last night, Madhur Jaffrey's recipe.

First time I'd made it, it was pretty good. We had a lot more than 8 prawns though.

Quorn chilli, salad, a little onion and garlic dip and a few Doritos on the side. Was yum!

I made us a sweet potato, chickpea and coconut curry with rice. It was devine

Tonight is Cincinnati five way, which is just chilli really, but a slightly more interesting way of serving it.

Tonight is homemade lasagne with garlic bread

Beige dinner tonight for all of us-chicken strips, potato wedges and corn cobs. I plan on smothering my chicken in sweet chilli sauce - delicious.

Tonight we’re having tagine and couscous. I’d like to serve it with a green veg but I cba going out to buy some so carrots it is!

Sweet chilli chicken, lettuce, onion, avocado, salsa and sour cream wraps. With corn and coleslaw. Oh and shit load of cheese on the wraps.

Parmesan crusted haddock roasted in the oven, jersey royals and rocket

Baked salmon, broccoli and garlicky fondant potatoes. A favourite and regular dinner here.

redcat your dinner sounds delicious and I may make similar - have to go to the supermarket now on the way home.
Need a quick dinner that everyone will eat. Dd is a fusspot
