What's your go-to on the nights where you don't have the energy to do a big meal?

Beans on toast
Ham bagel
Marmite on toast
Pizza from the freezer with salad
DD also likes 'bits and pieces' which is basically stuff like pitta bread, humous, cucumber, cheese, ham etc on a plate
DS is super-fussy and will only eat a handful of things Hmm

Not sure if anyone's said this but I've taken this from my mum from when I was a kid- pasta with a mix of the domino pots (not the jars so it's a small portion) but mix 2 flavours and add in a sliced matesons smoked sausage. I still love it and have it for lunches at work.

Also sometimes do I also normally have freezer bags with ready chopped/sliced veg for soup all in 1 bag ready to dump in a pot with stock. Its portioned for 2 so less than an hour, barely need to check it, add bread and done

Frozen pizza too, I get the margarita and then whack on frozen sweetcorn before cooking and serve with raw veggie sticks

Eggs in various forms
Microwave baked potatoes
Packet flavoured rice with leftover meat from the roast & stock - voila - chicken fried rice or similar
Oven pizza & crudites
"Picnic" - slices of ham, sticks of cheese, veg sticks, breadsticks, crisps, fruit, squeezy yoghurts, squeezy jellies - all chucked on a blanket for them to help themselves

Stirfry with Cashews, Nut Butter, Miso & Soy Sauce
(If need a super quick, no chop dinner I use the frozen veg mix, sometimes I omit the nut butter and add Quorn pieces)

Pasta with Pea & Pesto, or Tuna & Sweetcorn, or Red Pepper & Parmesan, or Super-Quick Tomato Sauce (chop cherry tomatoes, heat in microwave, stir in cream cheese and basil)

Salmon, Green Beans and Couscous (Whack salmon in oven in foil for 20 minutes, put green beans on same tray with tiny bit of oil, mix couscous with herbs and bouillon and pour boiling water over)

Mushrooms on Toast/with Gnocchi (Fry mushrooms in oil and mustard, mix in Cream Cheese. I know, weird but nice)

Or I sweetly smile at the husband until he makes dinner. (Usually wraps.)

Spanish tortilla from Tesco with beans. Keeps for ages in fridge

I also do waffles in toaster.

Egg fried rice using a pouch of rice.

Pesto pasta, grated cheese (or ham), cherry tomatoes, cucumber, pepper. Or fish fingers, frozen peas and baked beans (generally when we are running out of stuff and need to go shopping!)

Nachos - Tortilla chips covered with grated cheddar. Quick zap in the oven until cheesy is bubbly. Serve with mashed avocado / sour cream / salsa

Cream Cheese Nachos - Tortilla chips spread with a blob of Kiri/Philadelphia and a dollop of salsa.

Roast Sweet Potatoes - Simply stick in oven and wait. Rip open top and eat with a spoon. Good thing is that it doesn't need any toppings...these are a really popular winter street food in China.

Peanut Noodles - Boil asian-style noodles, glass noodles or instant noodles until soft. Mix peanut butter with water until it reaches a thin, dipping sauce consistency & add sesame oil or soy sauce to taste. Serve with lightly salted cucumber sticks. (My mum used to give me this once a week...and I always thought it was some kind of fancy sauce. Found out years later it was just peanut butter with water).

Frankfurters - Just boil and serve with mustard & ketchup. In Germany/Austria no bun is required and you find all kinds of sausages as street food.

I fry chicken and (pre sliced) mushrooms with some fajita mix from a packet. Put a rice pouch in the microwave. Then serve together with added sweet corn and grated cheese. We call it the Mexican dish. V quick.
Also, get fresh pasta and fresh tomato and marscapone sauce. This takes 3 mins to boil / microwave.

Mine have a hot school lunch so have their ‘packed lunch’ type tea such as sandwiches, crisps, yoghurt some nights, often in the car on the way to and from activities. Other nights it might be cheesy pasta - Philadelphia, splash of milk and grated cheddar, hummus and bread sticks with fruit, pizza, toasted sandwiches.

Oh forgot soup with crusty bread rolls - the bake at home ones. Also boiled eggs or eggy bread or fried egg on toast. Myself I love pouch of uncle ben’s vegetable rice.

Cook pasta, add peas in last couple of mins, drain, knob of butter, squirt of lemon and handful of grated cheese.. mine love it!

Don’t really like a lot of English staples like fish fingers, baked beans, sausages etc.

Quesadillas......kids are now adults but this is still the easy meal for dh and ds.
Make it as simple as you like......plain cheese if that's all you cba with making. Handful of salad if you must.
Been making ones with pork mince with a good bit of Nando's peri peri seasoning and onion.....fry up a batch and freeze it for another cba day.

My kids loved a mini smorgasbord of cheese, fruit, veggies, smoked oysters and hummus. Very quick and very easy.

Tortellini and tomato sauce from the supermarket chiller cabinet, possibly with garlic bread or salad.
Those fancy filled fish cakes with boiled new potatoes and veg (if it’s just me and ds1).
Breaded fish or chicken with chips or potatoes and veg or beans.
Pizza, salad, and coleslaw (and occasionally dough balls).
Fresh crusty bread with cooked meats / cheeses / salad / pots of pasta or potato salad / houmous etc.
Soup with lots of bread and butter.
A ready meal (I do try to buy the decent quality ones with a good bit of veg in).
