Stumbled across this on a student website (dont ask), gave it a whack, and oh my I'm in heaven..

half a chopped onion (I used frozen because Im lazy AF)
teaspoon on chopped garlic (I used frozen see above)
Fry off with a heaped teaspoon of smoked paprika
Add a cartoon of passata (you could get the garlic one and skip step 2 maybe?)
Then add a tin of mixed beans.
Serve with crusty bread.

It's like a 5 bean goulash and unbelievably morish. Less than £2, less than 10 minutes, and could feed 2 as a light supper -if you're not a greedy oink and are standing in the kitchen eating the remainder out of the pan-

Not the most sophisticated granted, but utterly lovely and reasonably healthy to boot :)

I made something very similar to this the other day from BBC goodfood website, it was lovely but not quite as good as the mushroom paprikash recipe which is also very simple.

I do something like this but use Chorizo instead of paprika and a tin of chopped tomatoes instead of passata. Its 'posh beans on toast' in this house Grin

My favourite at the minute is fry off an onion, add 2 tsp of chipotle (or harissa) paste, 2 tsp honey, 2 tsp red wine vinegar, carton of passata and a tin of chickpeas. Bloody delicious hot or cold!

My easiest, nicest meal also involves mixed beans, store cupboard enchiladas. You get two oven dishes, a pack of 6 wraps. Put mixed taco beans in each wrap, some cheese, sweetcorn, some chopped pepper and wrap them up into little parcels in the oven dishes. Then put any remaining taco bean sauce over the top and top with cheese. Stick under grill until cheese is grilled. Not very sophisticated but very cheap and filling.

Don't know if it's the cheapest or most delicious, but it is cheap, nutritious and filling, and I like it -
An onion, brown rice, frozen mixed veg (the sort with peas and beans for protein), turmeric,cumin, garlic, ginger, and paprika (or just curry powder if you're too skint to buy different spices), a bit of oil or butter.
Fry chopped onion, add spices, cook for a few minutes, add brown rice, cook for a couple of minutes, add water and stock cubes, cook until rice is nearly done, add frozen veg and cook till rice and veg is nicely cooked.
Add a fried egg or omelette, chopped nuts or a bit of chicken or prawns to up the protein.

Who ever uses half an onion?! Whack the whole onion in there, at the very least, or maybe two.

Pink gin - I make that recipe a lot but also add red pepper and feta cheese in cubes, or chicken.

Another favourite is roast vegetables - aubergine, red onion, courgettes, red pepper, and baby tomatoes and then have them with couscous and a sauce made from tomato purée or harrissa, barbecue sauce, cumin, olive oil and lemon. It delicious.

Fish or chicken on beans under salsa.

We tend to only use half pots of salsa so make this to use up the frozen leftovers.

Tin of beans, kidney, black, etc etc, in the bottom of a baking dish, 2 pieces of fish or chicken on top, salsa on top of the lot. Foil over and throw in the oven on medium ish for 30 - 40 minutes.

Enough time to grab a shower, get changed into sloppies and be settled in for the night!

Mmmm sounds good. I can't eat onions or garlic Confused(I miss garlic!) I wonder if this will be good without?
It's so difficult eating stuff and having to avoid the two!

I’ve got this one, even easier and cheaper.

Put bread in toaster.
Tip a tin on Heinz’s reduces sugar beans into a microwave bowl and blast for 3.5 mins.
Meanwhile fry some frozen diced chorizo.
Butter toast.
Beans now done. Tip over toast.
Tip chorizo and associated oil over beans.
Black pepper.
Few bits of fresh coriander.

Or simply just the beans and the toast.

We make something like this but with eggs. Just make a well and crack in the egg.

God it sounds nice but I know it would give me the evil farts.

My go to for a cheap meal is Hugh Fearnley-Whittingstall Sardine and Potato Bake:

I also used to grate some cheese over the top for the final stage once the foil comes off.

Oh I love sardines... not sure I could be faffed with the matchstick potatoes though Hmm
Maybe if I could find a 'cheat' version of the potatoes?

I have a similar one but with added Chorizo and I often use just Butter Beans as they take on the flavour of the sauce better.

Par boil baby new potatoes, chop them in half or three first.
Sauté a onion and a pepper.
Chuck pots in.
Add paprika, salt, pepper and a splash of sweet chilli sauce.
Fry off a chorizo.
Add chorizo to pots.
Let it cook awhile.
Eat with a chunk of crusty bread.
Delicious.

There was a thread on MN the other day about stuffed jacket potatoes where you do a jacket potato, scoop the potato out into a bowl, mash with fried onion, bacon , add loads of cheese then put back into the potato , more cheese on top and cook for another 15 minutes or so...OMG amazing and as per the original thread it has totally ruined "normal" jacket potatoes for me now Grin
