Stumbled across this on a student website (dont ask), gave it a whack, and oh my I'm in heaven..

half a chopped onion (I used frozen because Im lazy AF)
teaspoon on chopped garlic (I used frozen see above)
Fry off with a heaped teaspoon of smoked paprika
Add a cartoon of passata (you could get the garlic one and skip step 2 maybe?)
Then add a tin of mixed beans.
Serve with crusty bread.

It's like a 5 bean goulash and unbelievably morish. Less than £2, less than 10 minutes, and could feed 2 as a light supper -if you're not a greedy oink and are standing in the kitchen eating the remainder out of the pan-

Not the most sophisticated granted, but utterly lovely and reasonably healthy to boot :)

10 minute lemon pudding.

100g each caster sugar, soft butter, self raising flour, 2 eggs, zest of 1 lemon, 1 tsp vanilla essence, 4 tbsp lemon curd. Creme fraiche or ice cream to serve.

Mix everything except the lemon curd (and creme fraiche etc) till creamy. Microwave (high) in a suitable bowl 3 mins until set. Leave 1 minute while you heat curd 30 secs in microwave. Pour over the pudding and serve.

Cheapest, easiest pasta in the world:

Cook penne for 10 minutes, bung frozen peas and sweetcorn in the water with three minutes to go. Chop half an onion and put in colander. Drain pasta & veg over onion, give it a good shake, return to pan. Flake a tin of sardines in tomato sauce into pan, add a few dollops of mayonnaise. Mix it all in. Serve.

I think I used to work it out as costing about £1 to feed three of us (me & 2DC). For 2 adults & 2 DC I used two tins of sardines, which brought it up to around £1.30.

Pinkgin I put this on my watch list as I've been looking for low fat snack dinners after the ferrying and feeding of kids is done to keep me off the crisps and shite like that!
I have made many variations of your bean thing adding different herbs/veg and stuff and, while I now fart like a trouper, I'm defo eating a lot less shite. So thank you! Oh and it's meat free - I'm not a veggie but I'm headed that way and this helps. 😍
