Stumbled across this on a student website (dont ask), gave it a whack, and oh my I'm in heaven..

half a chopped onion (I used frozen because Im lazy AF)
teaspoon on chopped garlic (I used frozen see above)
Fry off with a heaped teaspoon of smoked paprika
Add a cartoon of passata (you could get the garlic one and skip step 2 maybe?)
Then add a tin of mixed beans.
Serve with crusty bread.

It's like a 5 bean goulash and unbelievably morish. Less than £2, less than 10 minutes, and could feed 2 as a light supper -if you're not a greedy oink and are standing in the kitchen eating the remainder out of the pan-

Not the most sophisticated granted, but utterly lovely and reasonably healthy to boot :)

I have another one! Sausages ,onion, potato fried together with beans and beef stock - delicious (I sometimes use cheaper frankfurters too Blush) all mopped up with bread and butter.

@foxessocks I've done the stuffed jackets and as delicious as they are they're too much of a faff for everyday cooking (treat time in this house!). However, does remind me of 'lazy mash' which is get jacket pots - stick in microwave - scope - bahm mash potatoes. No dastardly pealing/boiling required :)

Ha yes I suppose they don't fit into the "easy" part...simple concept but a faff to do, but they are cheap and definitely delicious! I can't have jacket potatoes the normal way anymore because I'm just disappointed!

These all sound amazing. I'm currently obsessed with marmite spaghetti, think it is a nigella recipe- cook spaghetti drain and then add a generous spoonful of marmite and a knob of butter, heat gently then add some grated cheese - delicious '

I've just had courgette and chili pasta. While pasta is cooking, fry grated courgette with dried chili flakes and a clove of crushed garlic. Drain pasta, squeeze (or squirt) lemon juice over the courgette mix, mix with pasta, season with black pepper.

I basically lived on that exact recipe plus pitta bread when I was a student nurse! It was delicious and in fact I might make it again some day now you've reminded me about it ;)

This is a good thread. Smoked paprika is one of my favourite things ever!

Mine isn’t quick but it’s easy, cheap and healthy -

3 garlic bulbs and 3 chopped red peppers in the oven 160degrees for an hour
Go sit down for a bit
When you’ve about 15 minutes to go, go and make a simple tomato pasta sauce with some dried herbs (or fresh if you’ve got them) omitting the garlic
Stir the lovely roasted garlic paste and chopped up roasted peppers in to your sauce.

We do the stuffed jackets but add an egg to help it fluff up. Whenever we have jackets I just cook twice as many as we need so the next day is stuffed jacket day with cold jackets ready to be jazzed up!

Not quick but super easy and delicious to do:
Put a tin or two of canellini beans (depending on how many of you) in a casserole dish, add a packet of cherry tomatoes, some pitted black olives from a jar and some fresh basil. Put chicken thighs (on the bone preferably) on top, salt pepper and olive oil the skins. Cook for about an hour while you go and do whatever you need to do and serve with crusty bread. The chicken will have released a load of juices that mixed with the beans and tomatoes is just delicious. About 5 mins prep and so easy to do!

Also, cook filled pasta (or penne, spaghetti or even gnocchi - anything will do). Put a (big!) knob of butter in a frying pan and and chopped sage on low heat for 5 mins. Mix with pasta. So good! Can always add chilli or garlic in with it but it's not necessary. Such a quick, easy, yummy meal

A really nice easy Nigel slater
Chicken legs tuck a clove of garlic under the skin
Olive oil in a pan
2 lemons cut in half and squeezed over the chicken
Tin of chickpeas
Glass of wine
Roast in the oven for 40 mins really nice

Easiest "pizza" in the world for kids and buttons to make.

Buy a packet of mini wraps or normal sized ones if older kids.
Tomato purée and grated cheese.
Add any topping.

5-7 minutes in oven.

Been making these with dd since she was a
toddler, she's now 8 and still loves them and they're great for play dates and for when she needs a quick dinner before brownies, served with corn on the cob or garlic bread.

Curried split pea soup -
Pre soak yellow split peas in water. Fry an onion, add 1- 2 teaspoons curry powder, add a few diced carrots. Add split peas and water, cook till the peas and carrots go soft, then add chunks of potato and a stock cube. Cook till it all goes mushy, serve with nice crusty bread. I put a dollop of plain yoghurt in as well.This is good with dumplings as well, or you can add bits of ham or bacon if you eat meat.
I love cooking things like this, it costs about 25p for a healthy filling meal. There are loads of recipes like this on youtube.
