Frozen vegetables are the best thing since sliced bread

I was going to say 'the dog's bollocks' but then I felt that would be unappetising.

Seriously though, I LOVE them. I have a 5 mo and previous pattern of buying fresh vegetables just keep meaning we'd drag ourselves to the fridge, open it, stare bleakly in and then order a takeaway, and a week later throw away the soggy puddles of courgettes etc.

I've made chicken fajitas with sliced frozen peppers and onions, chilli and this evening made a very successful shepherds pie utilising a casserole mix. Tell me your frozen veg recipe discoveries? I need to continue converting she.

Frozen cauliflower is the best for making cauliflower cheese. Let it defrost in a colander so all the water drains off, smother in cheese sauce and bake. Perfect every time.

I also love the idaho instant mash. If you add a little milk and butter it tastes no different to proper mash, and takes a minute.

AVOID the frozen avacado. It's horrible. I've still got most of a pack left and can't bring myself to throw it out yet, but don't want to eat anymore of it. It glares up at me when I go freezer diving.

Frozen onion, garlic and herbs. Frozen peas. Don’t like frozen veg in general.

Doesn’t take long to cook a courgette.

I'd echo the tesco frozen vegetables, especially the stir fry pack. Fried from frozen, with meat if you want, or tofu, or just a thin omelette rolled up and cut into strips, added when you dish up. It's great, and gets veg into student dd Wink she makes her own sauce with soy sauce, peanut butter, sweet chilli sauce, or supermarkets do sachets of various sauces for 50-60p.

Also frozen fruit, warmed up in a saucepan with some brown sugar and cinnamon, is delicious with ice cream, and you only have to do as much as you need, and not buy several different sorts of fruit that, as you say, will just turn to yuck in the bottom of the fridge

Frozen fruits of the forest. Chuck them in a baking dish frozen. Add a chopped apple if you like. Sprinkle some sugar on top. Cover with crumble mixture. Bake. Delicious ands easy store cupboard pudding.

Ewits thank you for the avacado ice cream idea. I'll give that a go, I did make an avacado/chocolate mousse before which was surprisingly nice, (but it was with a proper avacado).

Hope should I use frozen garlic and onion - everything just becomes very watery. Am I doing it wrong or are these only really suitable for things that are boiled/casserole? Thanks

Frozen raspberries are great for morning fruit. Take out in the evening. Put into small bowl in fridge overnight and you have a semi-compote in the morning.
Peas and sweetcorn great for chucking into pasta salad.
Spinach adds veg to a pasta sauce. Like it with ravioli, crème fraîche and cheese.

Frozen cauliflower is better for cauliflower curry, frozen spinach is fine for curry too but most frozen veg isn't good because it's so mushy

Those saying things are coming out mushy, you need a wok or large frying pan and to store fry them on high heat to lose the water. Then do whatever you like with them.

Frozen quinoa with veg from Iceland is lovely. Also frozen peppers, frozen mushrooms, frozen spinach, frozen onion and quorum mince in pasta.
Frozen peas, carrots, chicken and a tin of veg soup, layer of pastry = easy chicken pie

Yes onion needs high heat and a good olive oil. It's brilliant. If I'm being really lazy or suffering from reflux I use garlic oil.

I keep the Birds Eye little microwave individual packets of mixed veg in the freezer. So easy if I haven’t been shopping or the veg in the fridge has gone to mush.

And, yes, frozen mash is a game changer and has become a staple in my house.

I love fresh veg but I always keep a hearty supply of frozen. To me it only makes sense.

Frozen mushy peas have changed my life ....contrary to other posters I love frozen Brussels sprouts and cauliflower. I agree that frozen avocado is disgusting.

They are never quite as nice as fresh, but a lot of the time it's close enough and I think the brilliant convenience of it makes it worth it. The exception to this is a stir fry - fresh veg is so much nicer in a stir fry, you can tell if it's all been frozen. But I think it most other dishes it makes little difference, especially if it's something that's going into the oven.

Frozen mash, frozen broccoli - cook. Add a flaked (cooked) smoked haddock, mix, dip in bread crumbs and fry. Delicious fish cakes. But DS is a vegetarian so I omit the fish and add cheese, fry - his favourite.

Yes to frozen peas, sweet corn, green beans and fruit.

I also really like frozen vegetable chips, brilliant for the DC at adding another vegetable to their meal and a nice change from regular ones.
