I know this is AIBU but I’ve posted on the baking board with no response and I know the traffic here is immense.... so;

Can I ask: I’ve baked some cupcakes for my daughter’s birthday tomorrow (to take to school) we leave the house at 730am so no time in the morning to make buttercream and no time to take it out of the refrigerator to let it come to room temp and rewhip. Can I ice with buttercream tonight and lock it in an airtight container? Overnight? Will the buttercream go bad/crusty?

I've done that before. It won't go crusty for one night. In fact, I've covered a cake in buttercream a day and a half in advance and it's been fine. Just take them out of the fridge when you wake up so that they can come to room temperature.

@NCforthis2019 Op do you think bakers time it so the buttercream is just finished as the customer gets to the door 🤪 it will be fine xx

MrsMonkeyBear · 27/03/2019 15:04

The buttercream will be fine over night on the cake. I often have to make and decorate cakes the day before they are needed (early collections by customer)

I usually wrap the cake really well and keep it in either the fridge or at least a cool dark place.

No fridge space so I’ll have to be kitchen counter. Thanks everyone 😊

yes, buttercream will be fine for a couple of days.

Buttercream keeps well in a tin for a few days.

I think buttercream improves after a day or two. It sets a bit.

Cakes shouldn't be kept in the fridge anyway, it dries them out. (Same for bread)

Thank you so much everyone. I usually make the buttercream and ice on the day but I just don’t have the time tomorrow morning.
