To be pissed off that my mother has JUST changed her mind about coming for Christmas dinner

I need a rant. DH is at work all day today, so I'm doing a later Christmas dinner for about 7:30.

It was originally just me, my DD and my DH that I was cooking for but my mum and Dad thought it would be nice if they could come along too and see DD's presents and spend some time with us, along with my little sister.

I couldn't say no to that so agreed that of course they could come for Christmas dinner too.

So I ordered loads more food and a joint beef because they don't like turkey, puddings etc and they have just told me they are really full from lunch and don't want to come to mine for dinner anymore.

It was their idea in the first place! Xmas Envy

AIBU to just want to bloody cry. I'm 6 months pregnant. Been alone all day (since 4 am when DD woke up) with a rowdy 2 year old who's been crying for daddy and I've been prepping the food as I've been going.

DD has only just gone for a nap.

There is so much food chopped and cut up ready and my meat is all cooked and for what? It's all going to go to waste.
The table has looked all beautifully set since yesterday. I'm so angry and frustrated with them.

To use up the leftover veg:

Chop an onion and fry for a few minutes
Cut the veg into small bite size pieces, put them in to fry with the onion
Add some chopped up meat if you like
Fry for about 10 minutes
Whisk up a couple of eggs
Take the veg off the heat, add the eggs, mix thoroughly and put in a greased overproof dish.
Cover with cheese and bake for 20 mins.

So simple, even a bloke could do it while you put your feet up. Hope your Christmas gets better

plate all the extra food up in to meals and freeze, and on a busy, late or stressed out day you can pull out a nice roast dinner and throw in the microwave and put your feet up
my mum used to make ready meals like this for me when i was flatting while at Uni, so i could come home after being at Uni all day long and have a nice hot dinner in minutes
a few plates with Turkey and vege, a few with meat and vege, and freeze the left over meat also, it can re reheated and thrown in a sandwich or over a salad... sucks you had to go to all the trouble and expense for nothing so dont let it go to waste, turn it in to ready meals!

Done the house work really slowly today and the kitchen is getting there.

I've frozen a load of food and we've been eating it throughout the day! DH has just got home and is making himself and DD another roast... I have no appetite right now.
I might just have some gammon and cheese later.

I also might try and make a soup later on, I've never made a home made soup before.

It's my 25th birthday in 2 weeks and parents have text asking what I'm doing and what I want, so they obviously feel a bit guilty.
I'm not being a push over any more though. I'll spend the day with my little family, They can't buy me back with present offerings!

Unfortunately, I can't find a link online but Cranks Vegetable Crumble is an excellent way to use up root veg. It's a favourite in our house.
Basically chop onion and fry until soft.
Add chopped veg, some chopped tomatoes, herbs and cook in veg stock and milk. Cook until veg is soft.
Place in casserole and add a cheesey crumble and bake for about 20 mins.
PM me if you want a bit more detail.
Freezes well.

Soup is really easy. Chop and fry an onion in a saucepan with some garlic. Add a chopped up potato, fresh or leftover doesnt matter. Make up a chicken stock cube with a mug of water. Add the veg and stock, add water until it nearly covers the veg, lots of pepper and a pinch of seasalt. Simmer on a low heat for a half hour, blitz it with a stick blender, add a tablespoon of cream or yoghurt or milk. Serve. Yum. Good mix is parsnip and carrot, add a bit of curry powder with the onion is nice.

Onions will make your Soups go off very quickly, I avoid them using them in Soups.

Hello! I'm doing good, all the food has nearly gone. I used the last of the veg up today in a big vegetable soup which has gone down well!

We are all now loaded colds too so hopefully it's put some goodness in us!

New Years resolution is to carry this all on and not waste so much food, but to put it to good use and make healthier meals!
