cheese pie

hi,ive been trying to make a cheese pie,heres what ive done,rolled pastry out put it in oven tray,put grated cheese in about 100 grams,then put 100ml milk on top,put it into pre heated oven at gas mark 6 for 45 mins,the milk is still floating on top ….so mushie….can anyone help?

@itsmeagain2018 what pastry do you have? Short crust, puff, filo? If short or puff how about a cheese and diced potato Cornish pasty type dish? Or if puff, roll it out on a tray, grated cheese all over,a few slices of tomato, drizzle of olive oil, salt, pepper, in oven 170c ( fan ) for about 20-25 mins! Lovely!

Beaten eggs rather than milk will give a delicious set filling 😊

You need to add egg to the milk and cheese and wisk together then pour into the pastry. Milk is just milk on its own lol bless you. Always use a recipe if in doubt!!

Melted cheese and hot milk in pastry will just be mush. A cheese and potato pie make much more sense.

If you like cheese and pastry try these cheaptastyandeasy.wordpress.com/cheesy-sticks/ we make them all the time. You could easily put more cheese in if you wanted.

My DM’s cheese pie was pastry underneath, about a kilo of grated cheese mixed up with eggs and a little milk, pastry on top. Baked a long time in hot oven, gas 6. Delicious.

That sounds like cheese sauce pie. I'd best about 6 eggs, then add the cheese and a little milk, and bake it in the crust.

pour the filling out into a bowl, put the pastry back in the oven on its own for 5 mins to dry out a bit, add 2 -4 eggs to the milky cheese and pour into the pastry then cook until it goes solid... voila a cheesy quiche, next time mix the cheese with mashed potato and leave out the milk. A bit of chopped onion makes it nicer IMO

You need beaten egg for a quiche consistency. Or mash with cheese in the oven for a cheese and potato pie.

That's not going to work- you need eggs to make it set.

Cheese & Onion pie

Make suet crust pastry (2 parts plain flour to 1 part vegetable or beef suet, plus cold water to mix), chill it in the fridge and then roll out and use it to line a pie dish. Put in a sheet of greaseproof paper and some baking beans and blind bake at 170 C for about 15 minutes, then allow to cool.

Grate about 300 g of medium cheddar and finely slice an onion, then mix together and put into the pastry base. Beat together 4-6 eggs (depending on how big your dish is) a bit of milk and seasoning. Pour over the cheese mixture and put the pie in the oven at 160 for about 45-60 minutes, until the filling is set in the middle and golden brown. Eat warm.

*This recipe will not win any prizes for healthy eating, but the pie is divine.

Chop some onions, pan fry in butter. Add grated cheese. Salt and peppper. Shove in pastry. Job done.

Baked beans mandatory.

The milk wasn't a totally crazy idea. I followed a recipe for hollygog pudding, which was basically - shortcrust pastry rolled into a rectangle and spread with golden syrup, rolled up like a Swiss roll, then baked in a dish in a deep pool of milk, half-way up the pudding. The milk all seeped into the pastry and it was lovely!

My mum always made cheese pie by mixing a load of cheese with mashed potato, more cheese on top then baking till it went crispy.

Am I having a moment, but is egg and cheese in pastry not just quiche?

We used to have cheese pie at school. Definitely no potato in it, but a few strings of tomato peel to give the full "baked vomit" experience.

My mums cheese and onion pie was amazing. And It was just grated strong cheddar and sautéed white onions mixed together. Nothing else. Shortcrust pastry. Bake for about 40 mins.
