How long would you give someone on ebay to post something before opening a case? ive already messaged the seller asking when they would post, they said today but still marked as not sent.

When did you pay and what were the postage terms?

Give it a few days they may be busy

Bear in mind not all sellers bother to mark items as sent. What is the seller's feedback like?

When did you purchase it, what is the dispatch time on their listing and what is the estimated arrival date on your purchase? You can open a case if it doesn’t arrive in those dates, however as above not all sellers mark as sent.

Sorry to answer your question it would depend how much I wanted the item as to how long I would wait, I’ve waited a week over the promised time for something I really wanted.

Give them a week.
