Shamelessly posting for traffic.

Come autumn, I make what we call 'two for' (twofer) soup - 2 big carrots, 2 onions, 2 big leeks, two big potatos, 2 veg stock cubes (and two tablespoons of butter if we want it extra rich)

I love it, as it reminds me of being a kid and coming home to the smell of it on the hob.

But... I want to try something new.

What's your favourite soup recipe to make at home?

I love Delia’s leek onion and potato soup but it’s similar to yours. My other favourite is pea and ham.

Fridge bottom soup. Whatever is in there, made into a soup. With added lentils and a tin of tomatoes maybe. Or some leftovers.

With the added bonus of a surprise result every time.

Green veg soup:

Sauté broccoli, white onion, a potato, courgettes and leeks for about 20 mins or so then add stock and a splash of milk and cook until everything is softened.

Can also add any other green veg. Cabbage and spinach go nicely.

I make a version of the CG 'souper greens':

1 onion
1 large bag asparagus
1/2 brocolli head
3 mugs of frozen peas
leeks if I have them in
couple of handfuls of spinach
chicken stockpot

Cook then blend. You can add creme freche if you like it creamier.

The key is lots of white pepper, chilli flakes, garlic, a squeeze of lemon.

I always remember a spicy tomato soup I made as a kid in cooking class. No matter what I buy its never spicy. Not spicy hot just spicy flavour type thing. Nicest soup Iver ever had was the soup in hospital. Every single one was gorgeous.

Chicken and barley soup

600g skinless, boneless chicken thighs
onion, carrot, celery (grated)
garlic and ginger
150g pearl barley
Chicken or vegetable stock

Cook the veggies, garlic and ginger in a small amount of oil until soft. Add chicken, pearl barley and stock, and simmer for about 40min
Remove the chicken, shred it and add back to the pan. I added a squeeze of tomato puree, plenty of pepper and a dash of chilli sauce at the end too.

Serves 6-8

I've tried to make this as detailed as possible:

Open drawer
Remove can opener
Apply can opener to top of one can of Heinz tomato soup
Empty can into a saucepan
Place saucepan on hob
Turn on hob
Stir saucepan contents
Empty saucepan contents into bowl
Eat

Roughly chop 6 beef tomatoes, 2 sweet bell peppers, 1 red onion, several cloves of garlic and 1 aubergine, dust with salt and olive oil, roast for half an hour until soft.

Throw in a saucepan with a pint of good chicken stock, bring to the boil. Whizz up to smooth, add a good dusting of coriander (leaves or powder).

1 large onion; slightly brown it when you sweat it
whole punnet chestnut mushrooms
half bag dried mushrooms (I like the mini 'flakes' as they cook quicker)
garlic
1 large potato, cubed

sweat all of the above in butter then add stock, a little brandy if you have some, white pepper and some cream or creme freche just before serving.

Butternut squash, ginger, lime and chilli soup is my favourite.
Cut two butternut squash in half, scoop out the seeds, season and drizzle with oil, chuck a couple of whole garlic into the cavity. Roast at 200 until soft and browned. In a pan, add some oil and soften chopped ginger and onion then add lime zest. Scoop out the cooled squash flesh and add to pan. (you can also chuck in carrots, sweet potato and peppers here) Add chicken or vegetable stock. Simmer. Whizz. You can also add a tin of coconut milk before you whizz.

I just posted this on another thread, exuse the typos, they are appalling but I just c&p.

Leek and stilton soup is the easiest soup ever to make and is delicious.

25g butter
700g leeks thinly sliced
1 large potato (275g) cut into 1cm cubes
570ml water
2 veg stock cubes
120g stilton grated
150ml single creeam
salt and pepper.

melt butter in pan ans stir in leeks and potato, let the veg sweat for 3-4 mins.

add water and stock cubes to the pan and bring to the boil, simmer for 15-20 mins until potato is soft.

Throw all ingredients into a blender (I use a handheld on in the pan its easier) and blend until smooth.

Return to heat and stir in the stilton, salt and pepper until melted then just before serving stir in the cream.

Serve with crusty bread.

I love soup and make it every couple of days for the kids for after school.

My favourite is white, the DC Red.

It's so quick and easy. I have a hand whizzer thing so I just roughly chop everything up and it doesn't matter because it's going to be whizzed up anyway.

My mums mushroom soup is so comforting. Different to the other recipe about @whatsthestory123

Sliced mushrooms sweated in butter, you want them soft and wet, not browned.
Add half a tablespoon plain flour, stir any lumps out.
Add veg stock cube - not necessary but nice.
Grate in some nutmeg, fresh works best.
Add milk slowly as if you're making a roux until it's runny.
Simmer for a bit
Blend.
Add cream if you feel like it.
Best serves with salt & black pepper.

Looks a bit like wallpaper paste but really yummy.
Also if you don't add too much milk and don't blend it makes good mushrooms on toast.
