Shamelessly posting for traffic.

Come autumn, I make what we call 'two for' (twofer) soup - 2 big carrots, 2 onions, 2 big leeks, two big potatos, 2 veg stock cubes (and two tablespoons of butter if we want it extra rich)

I love it, as it reminds me of being a kid and coming home to the smell of it on the hob.

But... I want to try something new.

What's your favourite soup recipe to make at home?

DD’s favourite is: celery, leek and carrot in veg stock. When I’m whizzing it at the end, I whizz in some local blue cheese.

Tomato soup

Tin of chopped tomato
Tin of beans
Jar of carrots
Veg stock
4 pickled onions

Bring to the boil and then simmer for 20mins. Blend and serve.

I do a tweaked version of Italian wedding soup seeing as I now can’t find the original recipe I used online !

But essentially , put some meatballs in the oven ( if I have time I make them, if it’s after school , then they’re bought ones ) sweat some chopped onions , leek , celery and carrots till they’re softened , turn the heat up , throw in some chopped bacon, fry for a bit then add peppers , sweet corn , a potato and some frozen peas in, plus some garlic and whatever herbs you feel like , add a slug of tomato purée in , then put in a jar of passata , and top it up with boiling water . Simmer for 15 mins , then add the meatballs and some vermicelli . Let it cook for another 5 minutes or so , then it’s done . Never any left to freeze !

@AlphaBravo can I ask how you make the “two for” soup? Do you blend all the ingredients or just finely chop then cook on the hob?

Curried butternut squash. Peel and chop (removing seeds) a butternut squash. Ass a stock cube, a large onion, a smidge of lazy garlic and some medium curry powder and water. It’s delicious.

Delia's leek and potato. Onion saute in butter with 3 leeks, big potato, veg stock. Add milk or cream when liquidused, generous salt and pepper. Easy as and the kids love it.
