Shamelessly posting for traffic.

Come autumn, I make what we call 'two for' (twofer) soup - 2 big carrots, 2 onions, 2 big leeks, two big potatos, 2 veg stock cubes (and two tablespoons of butter if we want it extra rich)

I love it, as it reminds me of being a kid and coming home to the smell of it on the hob.

But... I want to try something new.

What's your favourite soup recipe to make at home?

My secret ingredient for any white soup such as parsnip or leek and potato is a big pinch of nutmeg.
Add a dash of grated cheese to tomato soup.
Or a blob of green pesto.

Oooo I love parsnip!

Yellow food has always cheered me up, so sometimes I put parsnip, butternut squash, a carrot and some yellow pepper in with onion, stock and seasoning. That's lovely.

We’ve been eating tortellini soup recently.
Heat 500ml stock and 300ml pasta sauce. Add tortellini of choice and cook for 5mins. Add spinach and sweet corn. Serve with grated cheese.
It’s a total cheat meal but we love it

My secret ingredient for pretty much any soup I make is Parmesan rind. It's an awesome addition. Just chuck a couple in while the soup is simmering and without tasting cheesy it just gives it a real depth of flavour.

Obvs you have to be pasta fiends like us to have Parmesan rinds regularly hanging out in the fridge.

And obvs take the rinds out before you blitz the soup!!

6 rashers smoked bacon chopped
3 large carrotts grated
1 large onion chopped
1 large mug of red lentils
Kettle full of boiling water
2 ham stock cubes
1 veg stock cube
Tablespoon butter

Fry bacon and onion in butter until soft.
Add carrotts and boiling water. Throw in stock cubes and lentils. Bring to boil. Reduce to med heat. Boil with lid off until smooth and creamy. You will need to stir often to prevent lentils sticking. Add pepper to taste.

Red Thai lentil soup.

Sauté chopped onions and carrots with red Thai curry paste, add red lentils and chicken stock and simmer until the lentils are cooked. Purée with a tin of coconut milk.

1 onion chopped, 1 sweet potato, 2 - 3 carrots. Sweat them off for a few minutes, add a half teaspoon each of garlic granuals and cumin. Add a teaspoon each of ginger puree and smoky paprika. Add half a cup of washed red lentils, sweat off for a few minutes then cover with water and simmer until the lentils are soft. Add a veg stock cube and more water and simmer for a few minutes either serve as a stew with some boiled potatoes and/or dumplings, or liquidise and serve with crusty granary bread.
Works with tinned chickpeas as well, or you can add in some baked beans for extra protein.
Makes about 4 portions for about £1 and is very filling.

Another one I make, and this is a real cheapie, (adapted from Jack Monroe's blog) is onion, carrots and dried split peas that have been presoaked. Add curry powder or garam masala and veg stick for flavour, liquidise when it's done, and swirl some basic yoghurt through it to give it a nice tang.
The thing with soups though is don't be afraid to experiment, try different spices and herbs, and chuck whatever you've got in there. If it looks dodgy just blend it up really well.

I made a lovely red lentil soup this week...
1 large onion
2 stems celery
1 leek
2 carrots
Packet of bacon (smoked if you like it)
Chop & sweat it down in a pan with oil
Add 1teaspoon cumin, 1/2 teaspoon turmeric & 1teaspoon garlic & cook a bit longer.
Add 250g red lentils
2 stock cubes
Water to cover
Simmer for 20mins ish (or until lentils cooked)
Add more water if needed
Blend

Chestnut soup- tin of chestnut purée and some chicken stock. Serve with crispy bacon bits and sage. Very easy and quick.

White bean soup- soak cannoli beans over night. Simmer in chicken or vegetable stock. Purée then sieve, add some extra virgin olive oil and black pepper. Serve with an extra swirl of oil and some rosemary.

Roast carrot soup. Roast carrots in the oven whilst sweating down some finely chopped skinned/seeded red peppers and some crushed ginger. Once they are soft add some ground cardamom and ground or crushed turmeric. Add hot stock and the carrots, simmer briefly, purée then reheat. Serve with a big pillowy naan bread and a swirl of chilli oil.

Dutch pea soup.

500 grams of split peas, boil for two hours. Add 2 large leeks, a very large sausage cut into little chunks, the meat of two chops in little chunks OR bacon, a potato, 3 or 4 carrots, half of a celeriac, celery, salt and pepper. It's even better the day after.

Chicken rice: 1 small onion finely chopped, 2 carrots grated or finely chopped, 1 large potatoe diced, cooked chicken (I use leftover chicken from a roast),2 large handfuls of rice, 2litres of chicken stock made with cubes and a few spoonfuls of chicken bovril. Fry veg for a few minutes then add stock and bovril, once boiling add in chicken and rice, simmer for about 1/2 an hour and voila! Best the next day though.

Easiest -half a pack of frozen casserole veg into a pot with chicken/veg stock, and a some dried red lentils. Add salt and pepper and cook till soft. Add cumin and blitz

Tastiest - boil a smoked gammon joint until cooked through - remove gammon from cooking liquid and leave to cool. Add a couple of chopped potatoes and an onion to the cooking liquid and boil until soft. Add a load of petit pois, cook for another few minutes and then blend. Chop gammon and add some to the soup and use the rest for other things. This one is great for Halloween as it is bright green - my boys call it’s witch’s brew!

Mary Berry's Stilton & Onion Soup and Somerset Mushroom Soup are big favourites here, along with Beef Goulash Soup from the Dirndl Kitchen blog. Really warm and filling.

Also creamy chicken and tarragon soup, although it's a bitch to make!!

Tomato and onion.

Depending on how much space I have in the freezer as to how many tomatoes I use

Fresh tomatoes
Onions
Worcester sauce
Basil
Mint
Dollop of cream
Tomato puree- a splodge of.

Fry onions.
De-pip tomatoes
Chuck tomatoes into the blender and whizz till blitzed.
Chuck everything into the slow cooker.
Maybe add some tomato juice if needed.
Turn on and leave on low for ''a while''
Serve with crusty bread.

I must make some tomorrow!

My Magic Soup (which I was making bloody years before Tesco)

Sweet potatoes
Red lentils
Carrots
Tinned tomatoes / passata
Red onions
Veggie stock
Load of smoked paprika

Shove it all in a giant pot. Cook until cooked (scientific) blend until smooth. Add flaked chillis you want.

It’s bloody lush. I usually do two pans at a time as everyone loves it - incl fussy DS1 who’s “allergic” to sweet potato (he’s not, he just proclaims he is Hmm).

Another vote for leek and potato here, but we like this one too! Spiced butternut soup. Roughly chop an onion, however many yellow and red peppers are in the fridge, and a butternut squash then soften in a knob of butter. Add a cup of dried red lentils, a tsp each of cumin, coriander and turmeric and a shake of chilli flakes. Stir over medium heat to cook the spices and coat it all in spicy deliciousness, then add a litre of stock. Use home made chicken stock if you have it, but a veggie or chicken stock cube is fine too. Bring to the boil then lower heat and simmer till veggies are soft. Blend till smooth, adjust seasoning and add some boiling water if its too thick to get it how you like it. Serve with a swirl of yoghurt or cream, or top with some grated cheese or crumbled crispy bacon. Super easy, super cheap, super filling!
